Description

This rustic wild bratwurst is a hearty highlight that I especially like to prepare in autumn. The mixed game meat, refined with mountain cheese, paprika and a spicy herb mixture, results in a sausage with an intense flavour. I serve it with a refreshing pasta salad with crisp vegetables and a touch of sweet mustard. The preparation may take some time, but the result is worth every effort. Perfect for a hearty lunch or a barbecue party with friends!

Ingredients (17 ingredients)

  • 5000 Gramm Game meat, mixed
  • 18 Gramm Salt, per kilogram of meat
  • 3 Gramm Pepper, per kilogram of meat
  • 1 Gramm Sugar, per kilogram of meat
  • 1 Gramm Paprika powder, hot; per kilogram of meat
  • 1 Gramm Garlic powder, per kilogram of meat
  • 500 Gramm Mountain cheese
  • 2 Stück Red bell pepper
  • 15 Gramm Herbs of Provence, freeze-dried
  • 1 Packung Natural casings
  • 1 Packung Pasta, e.g. Spirals
  • 1 Flasche Olive oil
  • 1 Becher Sweet Mustard
  • 3 Stück Pickled gherkins
  • 1 Stück Salt and pepper
  • 1 Bündel Fresh leaf spinach
  • 300 Gramm Smoked bacon, e.g. from wild boar

Preparation (8 steps)

Prepare game meat

Cut 5000 grams of game meat into cubes. Mix meat that is as lean and fatty as possible. Cut 500 grams of mountain cheese, 2 red peppers and 300 grams of wild boar bacon into small pieces.

Make spice mixture

In a bowl, mix 18 grams of salt per kilogram of meat, 3 grams of pepper per kilogram of meat, 1 gram of sugar per kilogram of meat, 1 gram of hot paprika powder per kilogram of meat and 1 gram of garlic powder per kilogram of meat.

Season meat

Pour the spice mixture over the diced meat and mix thoroughly.

Mix cheese, herbs, paprika and bacon

Thoroughly mix in cheese, 15 grams of herbs de Provence, paprika and bacon.

Prepare natural casings

Soak the natural casings in lukewarm water for 15 minutes. Change the water once or twice and finally squeeze a bubble of water through the casing to rinse out any remaining salt residue.

Cook pasta

Put 1 pack of pasta (e.g. spirals) into the mixing bowl, cover with water and cook for 12 Min./100°C/speed 1. Then drain through the simmering basket.

Prepare pasta salad marinade

For the marinade, put 3 tablespoons of olive oil, 1 tablespoon of sweet mustard, 2 tablespoons of finely chopped pickled gherkins, salt and pepper into the mixing bowl and stir for 10 sec./speed 3.

Mix pasta salad

Mix cooled pasta with the marinade as well as corn, tomatoes, feta cheese and fresh leaf spinach.
