Description

This couscous with vegetables and spicy poultry is a comforting and tasty dish, perfect for autumn evenings or festive meals. I often prepare it for my friends and family, and it is always very appreciated. The vegetables, cooked in a spice-infused broth, are tender and melting, while the poultry is juicy and full of flavor. A complete and balanced dish, easy to prepare with the Thermomix®, which will delight everyone's taste buds. Do not hesitate to add a touch of harissa to enhance the taste!

Ingredients (13 ingredients)

  • 3 piece Tomato
  • 1 piece Eggplant
  • 2 piece Zucchini
  • 6 piece Carrot
  • 5 piece Turnip
  • 2 can Tomato concentrate
  • 2 cube Beef broth
  • 500 g Chickpeas
  • 8 piece Merguez
  • 8 piece Chicken thighs
  • 500 g Fine semolina
  • 3 c. à soupe Ras-el-hanout
  • 4 c. à soupe Olive oil

Preparation (7 steps)

Preparation of the vegetables

Wash the tomatoes, eggplant, zucchini, carrots and turnips. Peel and dice the eggplant, carrots and turnips. Cut the tomatoes and zucchini into small dice.

Cooking the vegetables and poultry

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Pour the olive oil into the Thermomix bowl. Add the chicken thighs and brown for 5 Min./Varoma/Stufe 1. Remove the chicken thighs and set aside.

Adding the vegetables and broth

Thermomix® Setting
30 min/212°F/Speed 1 100

Add the diced eggplant, carrots and turnips to the Thermomix bowl. Also add the diced tomatoes and zucchini. Pour in 1.5 L of water, add the beef bouillon cubes, tomato concentrate and ras-el-hanout. Program 30 Min./100°C/Stufe 1.

Cooking the chickpeas

Thermomix® Setting
30 min/212°F/Speed 1 100

Drain the chickpeas and add them to the Thermomix bowl. Continue cooking for 30 Min./100°C/Stufe 1.

Cooking the semolina

Meanwhile, cook the fine semolina according to the package instructions.

Cooking the merguez

Cook the merguez in a frying pan over medium heat until they are fully cooked.

Assembly and service

Serve the couscous hot with the vegetables, chicken thighs and merguez. Serve with cooked semolina.
