Description

This cauliflower and broccoli casserole is an absolute comfort food! I especially like to make it when it gets colder outside. The combination of tender cauliflower and broccoli, savory ham, and a creamy cheese sauce is simply unbeatable. Preparing it in the Thermomix® also makes the whole thing super quick and easy. Perfect for a quick lunch or a cozy dinner with the family. If you like, you can also add other vegetables such as carrots or peas. A truly versatile recipe!

Ingredients (11 ingredients)

  • 1 piece Cauliflower
  • 1 piece Broccoli
  • 100 g cooked ham - cubed
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 200 g Cream
  • 200 ml Vegetable stock
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg
  • 150 g grated Gouda

Preparation (7 steps)

Prepare cauliflower and broccoli

Cut the cauliflower and broccoli into florets. Cut the ham into small cubes and set aside.

Cook cauliflower and broccoli

Thermomix® Setting
5 min/212°F/Speed 1 100

Add 500 ml water and 1 tsp salt to the mixing bowl. Place the cauliflower florets in the simmering basket and insert it into the mixing bowl. Cook for 5 Min./100°C/level 1. Then add the broccoli florets and cook for another 5 Min./100°C/level 1.

Prepare sauce

Thermomix® Setting
2 min/122°F/Speed 1 50

Remove the simmering basket and empty the water from the mixing bowl. Add 2 tbsp butter to the mixing bowl and melt for 2 Min./50°C/level 1.

Make a roux

Thermomix® Setting
2 min/212°F/Speed 2 100

Add 2 tbsp flour and sauté for 2 Min./100°C/level 2.

Finish sauce

Thermomix® Setting
5 min/194°F/Speed 3 90

Add 200 g cream and 200 ml vegetable stock and cook for 5 Min./90°C/level 3. Season with salt, pepper and nutmeg.

Layer casserole

Place the cauliflower, broccoli and ham in a casserole dish. Pour the sauce over it and mix everything well.

Bake cheese

Sprinkle 150 g of grated Gouda over the casserole and bake in a preheated oven at 200°C top/bottom heat for approx. 20 minutes until the cheese is golden brown.
