Description

This creamy chicken and spinach pasta bake is a family favorite! I've been making it for years, and it's always a hit. The combination of savory pancetta, tender chicken, and fresh spinach in a rich, cheesy sauce is simply irresistible. It's perfect for a comforting weeknight dinner or a potluck with friends. The best part? It's easy to prepare ahead of time and bake when you're ready to eat. Feel free to add other vegetables like mushrooms or bell peppers for extra flavor and nutrients. Enjoy!

Ingredients (13 ingredients)

  • 2 tbsp vegetable oil
  • 65 g pancetta
  • 2 piece chicken breasts
  • 1 piece onion
  • 3 clove garlic cloves
  • 500 g conchiglie pasta
  • 40 g plain flour
  • 220 ml double cream
  • 470 ml whole milk
  • 1 tbsp Dijon mustard
  • 100 g cheddar
  • 200 g spinach
  • 65 g parmesan

Preparation (10 steps)

Prepare Pancetta

Pour the vegetable oil into a large, deep frying pan. Once shimmering, scatter in the pancetta. Cook until golden, then remove from the pan using a slotted spoon, leaving behind the oil. Set aside.

Sear Chicken

Add the chicken to the pan and sprinkle with salt and pepper. Cook until golden on all sides, around 5-6 mins. Remove from the pan and set aside.

Chop Onion and Garlic

Add the onion to the mixing bowl and chop for 3 Sec. / Stufe 5.

Sauté Onion and Garlic

Add the garlic cloves to the mixing bowl and chop for 3 Sec. / Stufe 7. Scrape down the sides of the mixing bowl with a spatula. Cook for 8 Min. / 120°C / Stufe 1.

Add Flour

Scatter the plain flour into the onion and garlic mixture, and cook for 1 Min. / 120°C / Stufe 1.

Make the Sauce

Pour in the double cream and whole milk a little at a time, until you have a smooth sauce. Cook for 5 Min. / 90°C / Stufe 3.

Add Mustard and Cheddar

Stir the Dijon mustard and cheddar into the sauce. Season well with salt and pepper. Cook for 2 Min. / 60°C / Stufe 2.

Combine Ingredients

Stir in the cooked pasta, chicken, reserved pancetta and a good splash of pasta water – you want it to be quite saucy.

Add Spinach

Stir in the spinach a handful at a time to wilt, then transfer everything to an ovenproof dish.

Bake

Sprinkle with parmesan over the top and some more black pepper. Bake in a preheated oven at 180°C for 20 minutes, or until golden brown and bubbly.
