Description

This creamy chicken dish with sun-dried tomatoes and bacon is a guaranteed crowd-pleaser! I've been making it for years, and it's always a hit. The combination of tender chicken, savory bacon, and tangy sun-dried tomatoes in a rich, creamy sauce is simply irresistible. It's perfect served over angel hair pasta for a comforting and satisfying meal. While it's hearty enough for a special occasion, it's also easy enough to make on a weeknight. This dish is best enjoyed warm and is sure to become a family favorite!

Ingredients (14 ingredients)

  • 1.5 pound skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 3 clove garlic, minced
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon ground thyme
  • 0.5 cup chicken broth, divided
  • 0.5 pound bacon
  • 1 package angel hair pasta
  • 1 tablespoon all-purpose flour
  • 0.5 cup freshly shaved Parmesan cheese
  • 0.25 cup whipping cream
  • 0.25 cup chopped sun-dried tomatoes
  • 1 pinch red pepper flakes
  • salt

Preparation (9 steps)

Prepare the Chicken Breasts

Preheat the oven to 350 degrees F (175 degrees C). Place chicken breasts on a flat work surface. Slice horizontally through the middle, being careful not to cut all the way through to the other side. Open the 2 sides and spread them out like an open book to butterfly.

Melt Butter and Sauté Garlic

Add 2 tablespoons of butter to the mixing bowl and melt for 2 Min./50°C/Stufe 1.

Add Garlic and Herbs

Add 3 cloves of minced garlic, ½ teaspoon of dried oregano, and ¼ teaspoon of ground thyme to the mixing bowl. Sauté for 30 Sec./120°C/Stufe 1.

Sear the Chicken

Remove the mixture from the mixing bowl and set aside. Sear the butterflied chicken breasts in a large, oven-safe skillet over medium-high heat until golden brown but not fully cooked, 3 to 4 minutes per side. This step cannot be done in the Thermomix.

Bake the Chicken

Pour ¼ cup of chicken broth into the skillet with the chicken and bake in the preheated oven until chicken is no longer pink in the centers and juices run clear, about 15 minutes. This step cannot be done in the Thermomix.

Cook the Bacon

Place ½ pound of bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool enough to handle, about 5 minutes; chop. This step cannot be done in the Thermomix.

Cook the Pasta

Bring a large pot of lightly salted water to a boil. Cook 1 (16 ounce) package of angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain and keep warm. This step cannot be done in the Thermomix.

Prepare the Sauce

Remove skillet from the oven and transfer chicken to a plate, reserving juices in the skillet. Keep chicken warm and place skillet on the stovetop. Whisk 1 tablespoon of all-purpose flour into the skillet over medium heat. Add remaining ¼ cup of chicken broth, ½ cup of freshly shaved Parmesan cheese, and ¼ cup of whipping cream. Whisk until combined. This step cannot be done in the Thermomix.

Combine and Serve

Add ¼ cup of chopped sun-dried tomatoes, 1 pinch of red pepper flakes, and salt to taste. Add bacon and chicken back into the skillet. Serve on top of hot cooked pasta. This step cannot be done in the Thermomix.
