Description

These cod croquettes are a classic that never fails, perfect for a special dinner or as a delicious appetizer. The key is the desalted cod, which gives it a unique and authentic flavor. The creamy béchamel, enriched with garlic and fresh parsley, makes each bite an explosion of flavor. Although they require a little time, the end result is worth it. I always prepare them for Christmas and New Year's Eve, and they are always a success! They can be accompanied with a green salad for a fresh and light contrast. Go ahead and try them, you will love them!

Ingredients (10 ingredients)

  • 200 gramos desalted cod
  • 60 gramos butter
  • 70 gramos wheat flour
  • 500 mililitros milk
  • 2 dientes garlic
  • 1 puñado chopped parsley
  • 1 container oil for frying
  • 1 pinch salt
  • 2 piece eggs
  • 1 pack breadcrumbs

Preparation of the cod and garlic

If the cod is not desalted, put it in water for 2 days, changing the water every 8 hours. Crumble the cod, remove the bones and skin. Peel 2 cloves of garlic and chop them finely. Set aside.

Sauté the garlic

Put 60 g of butter in the Thermomix bowl and add the chopped garlic. Program 3 Min./120°C/Stufe 1.

Add the cod

Add 200 g of crumbled cod to the bowl and stir with the spatula to mix well with the garlic and butter. Program 2 Min./120°C/Stufe 1.

Incorporate the flour

Add 70 g of wheat flour to the bowl and mix. Program 3 Min./100°C/Stufe 2.

Add the hot milk

Thermomix® Setting

Heat 500 ml of milk in the microwave or in a saucepan. With the Thermomix running at Stufe 3, gradually add the hot milk to the bowl. Program 8 Min./90°C/Stufe 3.

Add the parsley and cool the dough

Thermomix® Setting
10 sec/Speed 3

Add 1 bunch of chopped parsley and 1 pinch of salt to the bowl. Mix 10 Sek./Stufe 3. Pour the dough into a bowl, cover with plastic wrap and let cool completely. Refrigerate for 3-4 hours.

Shape the croquettes

Beat 2 eggs in a bowl. Put 1 package of breadcrumbs in another bowl. Take portions of dough with a spoon, shape them into ovals with your hands, pass them through the beaten egg and then through the breadcrumbs. Repeat this process until all the croquettes are ready.

Fry the croquettes

Heat 1 glass of oil in a pan over medium heat. Fry the croquettes in batches until golden brown. Reserve them on kitchen paper to remove excess fat.
