Description

This creamy potato and leek soup is a comforting classic, perfect for a chilly evening. I've been making this soup for years, and it's always a hit with my family. The combination of potatoes and leeks creates a naturally sweet and savory flavor that's simply irresistible. It's quick and easy to prepare, making it ideal for a weeknight meal. For a richer flavor, you can use chicken stock, or keep it vegetarian with vegetable stock. A swirl of cream and fresh chives adds a touch of elegance. This soup is also great for meal prepping – it tastes even better the next day!

Ingredients (9 ingredients)

  • 50 g butter
  • 450 g potatoes
  • 1 piece small onion
  • 450 g white parts of leeks
  • 850 ml light chicken stock
  • 142 ml whipping cream
  • 125 ml full-fat milk
  • 1 piece small knob of butter
  • finely chopped chives

Preparation (8 steps)

Prepare the vegetables

Peel and cut 450g potatoes into 1cm cubes. Peel and roughly chop 1 small onion. Wash and slice 450g white parts of leeks.

Sauté the vegetables

Add 50g butter to the mixing bowl and melt for 3 Min./120°C/Stufe 1.

Add vegetables and cook

Add the cubed potatoes, chopped onion, and sliced leeks to the mixing bowl. Season with salt and pepper. Cook for 10 Min./100°C/Stufe 1.

Add stock and simmer

Pour in 850ml light chicken stock. Bring to a simmer and cook for 5 Min./100°C/Stufe 1.

Purée the soup

30 sec/Speed 8-10

Purée the soup for 30 Sek./Stufe 8, gradually increasing to Stufe 10 until smooth. Use the spatula to scrape down the sides of the mixing bowl if needed.

Add cream and milk

Thermomix® Setting
3 min/194°F/Speed 2 90

Add three quarters of a 142ml container whipping cream and 125ml full-fat milk to the mixing bowl. Heat for 3 Min./90°C/Stufe 2.

Prepare the leek garnish

3 min/248°F/Speed 1 120

Finely shred the white part of 1 leek. Add a small knob of butter to the mixing bowl and cook the shredded leek for 3 Min./120°C/Stufe 1 until softened.

Serve

Reheat the soup for 1 Min./70°C/Stufe 1. Pour into warmed bowls. Drizzle the remaining cream over each serving, top with a little pile of buttered leeks and a scattering of chives and black pepper. Serve immediately.
