Description

This creamy potato curry is a quick and easy dish perfect for student kitchens or a quick lunch. It is gluten-free, lactose-free, vegetarian, and vegan. Preparation with the Thermomix® only takes 40 minutes and yields 4 servings. Serve with rice and fresh coriander.

Ingredients (13 ingredients)

  • 1000 g Potatoes
  • 1 Stück Onion
  • 2 Zehen Garlic
  • 2 EL Coconut oil
  • 2 EL Tomato paste
  • 1 TL Ginger - grated
  • 3 TL Curry
  • 2 TL Turmeric
  • 1 TL Sweet paprika powder
  • 800 ml Coconut milk
  • 0.5 Stück Lime - squeezed
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (6 steps)

Prepare potatoes

Wash, peel and cut 1 kg of potatoes into bite-sized pieces. Set aside.

Chop onion and garlic

Put 1 peeled onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 2 tbsp coconut oil and sauté for 3 min./120°C/speed 1.

Add spices and tomato paste

Add 2 tbsp tomato paste, 1 tsp grated ginger, 3 tsp curry, 2 tsp turmeric and 1 tsp sweet paprika powder and sauté for 1 min./120°C/speed 1.

Add potatoes and coconut milk

20 min/212°F/Linkslauf Speed 1 100 Reverse

Add the prepared potato pieces and 800 ml coconut milk (2 cans) to the mixing bowl. Simmer for 20 min./100°C/reverse rotation speed 1.

Season and serve

10 sec/Speed 3

After the cooking time has elapsed, squeeze out 1/2 lime and add the juice together with salt and pepper to taste. Stir in for 10 sec./speed 3. Serve the potato curry with rice and coriander.
