Description

This creamy potato and leek soup is a true comfort food! I especially like to make it in the fall when it gets colder outside. The combination of potatoes and leeks makes the soup wonderfully creamy and aromatic. A few crispy bacon cubes add that certain something. If you like it vegetarian, just leave out the bacon. The soup can be prepared very well and still tastes delicious the next day. A fresh sprig of herbs as a garnish makes it a real eye-catcher. Perfect as a warming meal for the whole family!

Ingredients (5 ingredients)

  • 3 Scheibe/n Smoked bacon
  • 1 tbsp Oil
  • 2 Stange/n Large leek, cut into rings
  • 500 g Potato(es) peeled, diced
  • 1 Liter Chicken broth

Preparation (7 steps)

Prepare smoked bacon

Cut the smoked bacon into small cubes and remove the rind. Fry the bacon in a pan without oil over medium heat for about 3 minutes until crispy. Then drain on kitchen paper and set aside.

Prepare leek

Clean the leek, wash thoroughly and cut into rings. Do not use the dark green parts of the leek as they are very tough.

Sauté leek

Add 1 tbsp oil to the mixing bowl and add the leek. Sauté 5 min./120°C/speed 1.

Add potatoes and broth

Thermomix® Setting
20 min/212°F/Speed 1 100

Add 500 g peeled and diced potatoes and 1 liter chicken broth to the mixing bowl. Cook 20 min./100°C/speed 1.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Puree the soup for 30 sec./speed 8-10 until it reaches the desired consistency. Puree longer if necessary.

Refine soup

Thermomix® Setting
2 min/194°F/Speed 1 90

Add the fried smoked bacon to the soup and season with salt and pepper. Heat 2 min./90°C/speed 1.

Serve

Pour the soup into bowls and serve garnished with a fresh sprig of herbs if desired.
