Description

This sparkling wine risotto is a real treat and can be wonderfully prepared in the Thermomix®. I like to make it when it should be something special, because the fine sparkling wine taste gives the risotto an elegant touch. The preparation is very simple and does not take long, so you can spontaneously conjure up a festive dish. A piece of fried fish or just a fresh salad goes particularly well with it. An absolute favorite recipe that is always well received by my guests!

Ingredients (7 ingredients)

  • 250 g Dry sparkling wine
  • 80 g Onion(s)
  • 10 g Olive oil
  • 10 g Butter
  • 200 g RiceRisotto rice
  • 500 g Vegetable broth
  • Parsley

Preparation (5 steps)

Chop onions

Thermomix® Setting
5 sec/Speed 5

Add 80 g onions to the mixing bowl and chop for 5 sec./speed 5. Scrape down with the spatula.

Sauté onions

Thermomix® Setting
2 min/248°F/Speed 1 120

Add 10 g olive oil and 10 g butter to the onions in the mixing bowl and sauté for 2 min./120°C/speed 1.

Sauté rice

Thermomix® Setting
1 min/248°F/Speed 1 120

Add 200 g risotto rice and sauté for 1 min./120°C/speed 1.

Cook risotto

Thermomix® Setting
40 min/212°F/Speed 1 100

Add 250 g dry sparkling wine and 500 g vegetable broth and cook for 40 min./100°C/speed 1. The cooking time may vary depending on the type of rice.

Sprinkle the finished risotto with chopped parsley as needed and serve.
