Description

This creamy vegetable fricassee with vegan chicken strips is an absolute comfort food! I like to make it when I need something quick and still want something healthy on the table. The soy cooking cream makes the fricassee particularly creamy and the peas add a fresh note. Rice goes perfectly with it. A dash of lemon juice and fresh parsley round off the dish. Ideal for a quick lunch or a light dinner. And the best thing: it's completely vegan!

Ingredients (15 ingredients)

  • 1 piece Onion
  • 3 piece Carrots
  • 300 g brown Mushrooms
  • 45 g vegetable Butter
  • 1 tbsp Wheat flour
  • 2 Pck. vegan strips chicken-style
  • 2 piece Bay leaves
  • 1 pinch Nutmeg
  • to taste Salt
  • 200 g Rice
  • 1 bunch Parsley
  • 250 ml Soy cooking cream
  • 150 g Frozen peas
  • 0.5 piece Organic lemon
  • to taste Pepper

Preparation (6 steps)

Prepare onion, carrots and mushrooms

Peel and halve the onion and place in the mixing bowl. Chop for 3 sec./level 5. Peel the carrots, cut into pieces and add to the mixing bowl together with the cleaned and diced mushrooms. Chop for 5 sec./level 4.

Add vegetable butter and sauté for 3 min./120°C/level 1.

1 min/212°F/Speed 2 100

Add wheat flour and sauté for 1 min./100°C/level 2.

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Add vegetable broth, vegan strips, bay leaves and nutmeg and simmer for 10 min./100°C/reverse rotation level 1. Season with salt.

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Add soy cooking cream, frozen peas and lemon juice and simmer for another 5 min./90°C/reverse rotation level 1. Season with pepper.

Chop the parsley and arrange the fricassee with rice. Garnish with freshly chopped parsley.
