Description

This chestnut cream is a real treat, especially in the cold season! I make it every year in the fall when the chestnuts come fresh from the market. The preparation is a bit time-consuming, but the result is worth every effort. The cream tastes wonderfully nutty and slightly sweet, perfect as a spread for breakfast or as a filling for cakes and pies. It is naturally gluten-free and vegetarian. A tip: Refine the cream with a dash of rum or cognac for a special touch!

Ingredients (6 ingredients)

  • 1 kg chestnuts
  • 220 g sugar
  • 1 tbsp coarse salt
  • 440 ml water
  • 1 piece vanilla bean
  • 1 tbsp sunflower seed oil

Preparation (7 steps)

Prepare chestnuts

Place 1 kg chestnuts in a bowl and cover with water. Let soak for 30 minutes.

Cut the chestnuts

Rinse the chestnuts, dry them and make a horizontal cut in the shell.

Cook chestnuts

Thermomix® Setting
30 min/212°F/Speed 1 100

Place the cut chestnuts in the mixing bowl. Add 440 ml water, 1 cucchiaio sunflower oil and 1 cucchiaio coarse salt. Cook for 30 min./100°C/speed 1.

Let the chestnuts cool

Place the cooked chestnuts on a clean, damp cloth, wrap them in it and let rest for 10 minutes.

Peel chestnuts

Take the chestnuts one by one and remove the shell and skin. There should be about 660 g of peeled chestnuts left.

Puree chestnuts

Thermomix® Setting
30 sec/Speed 8

Place the peeled chestnuts together with 220 g sugar and the pulp of 1 bacca di vaniglia in the mixing bowl. Puree for 30 sec./speed 8. If necessary, push down with the spatula and repeat the process until a fine cream is formed.

Refine chestnut cream

Thermomix® Setting
5 min/194°F/Speed 2 90

Let the pureed chestnut cream simmer for another 5 min./90°C/speed 2 to refine it and combine the flavors. Use the spatula to stir the cream evenly.
