Description

This curd cream with lingonberries and sponge cake is a wonderfully light dessert that can be prepared in the Thermomix® in no time at all. I like to make this dessert when I need to be quick and still want to put something delicious on the table. The combination of creamy curd, fruity lingonberries and the slightly sour cherry juice is simply unbeatable. Perfect as a sweet finish after a hearty meal or just as a snack in between. If you like, you can sprinkle some chopped almonds or nuts on top. An absolute favorite recipe!

Ingredients (9 ingredients)

  • 8 Stück Ladyfingers or Sponge Cake Pastries
  • 6 EL Cherry Liqueur or Cherry Juice
  • 100 g Wild Lingonberries (from the jar)
  • 400 g Curd Cheese (20% fat in dry matter)
  • 125 g Sour Cream or Crème fraîche
  • 4 EL Milk
  • 2 Pck. Vanilla Sugar
  • 1 EL Sugar
  • Lemon Balm for Decoration

Preparation (4 steps)

Prepare Sponge Cake

Thermomix® Setting
5 sec/Speed 5

Place 8 ladyfingers or sponge cake pastries in the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Prepare Curd Cream

Thermomix® Setting
20 sec/Speed 4

Put 400 g of curd cheese, 125 g of sour cream or crème fraîche, 4-5 tbsp of milk, 2 packs of vanilla sugar and 1-2 tbsp of sugar in the mixing bowl and mix for 20 sec./speed 4.

Layering

Layer the chopped sponge cake pieces, 6-7 tbsp cherry liqueur or cherry juice, 100 g wild lingonberries and the curd cream alternately in glasses.

Garnish and serve

Garnish the lingonberry curd cups with lemon balm and serve.
