Description

This original dessert combines the sweetness of camembert with the indulgence of caramelised apples. I have been making this recipe for years and it always surprises my guests! The camembert cream, smooth and fragrant, goes perfectly with the slightly acidic apple compote. It is a perfect dessert for a special occasion or simply to treat yourself. The preparation takes a little time, but the result is really worth it. Feel free to add a pinch of cinnamon to intensify the autumnal flavours. A real treat!

Ingredients (10 ingredients)

  • 125 g sugar
  • 50 g water
  • 350 g liquid cream
  • 1 pinch cinnamon
  • 5 piece egg yolks
  • 0.5 piece raw milk camembert
  • 250 g water
  • 50 g sugar
  • 6 feuilles gelatine
  • 3 piece apples

Preparation of the caramelised apples

Thermomix® Setting
10 min/212°F/Speed 1 100

250 g of water and 50 g of sugar in the Thermomix bowl. Program 10 Min./100°C/Stufe 1 without the measuring cup.

Cooking the apples

Thermomix® Setting
15 min/212°F/Speed 1 100

Peel and cut 3 apples into pieces. Add the apples to the Thermomix bowl and cook 15 Min./100°C/Stufe 1. Check the apples are cooked, they should be tender.

Incorporation of the gelatine

Thermomix® Setting
10 sec/Speed 3

Soften 6 gelatine leaves in cold water. Drain the gelatine and add it to the cooked apples in the Thermomix bowl. Mix 10 Sek./Stufe 3. Let cool and crush with a fork.

Preparation of the caramel

Thermomix® Setting
20 min/239°F/Speed 1 115

Put 125 g of sugar and 50 g of water in the Thermomix bowl. Cook 20 Min./115°C/Stufe 1 without the measuring cup, until a light caramel is obtained (small ball).

Preparation of the camembert cream

Thermomix® Setting
20 sec/Speed 4

Remove the crust from ½ raw milk camembert (approximately 125g). Put the 5 egg yolks and the camembert in the Thermomix bowl. Mix 20 Sek./Stufe 4.

Incorporation of the caramel

30 sec/Speed 3

Carefully pour the hot caramel (step 4) over the egg yolk/camembert mixture in the Thermomix bowl. Mix 30 Sek./Stufe 3. Allow to cool completely.

Preparation of the whipped cream

Thermomix® Setting
2 min/Speed 3.5

Put 350 g of very cold liquid cream and a pinch of cinnamon in the Thermomix bowl. Insert the whisk. Whisk 2 Min./Stufe 3.5, or until a firm whipped cream is obtained.

Incorporation of the whipped cream

Gently incorporate the cinnamon-flavoured whipped cream into the cooled camembert/caramel mixture. Mix gently with a spatula.

Plating and cooling

In glasses, arrange a layer of apple marmalade, then a layer of camembert cream. Repeat the operation if desired. Refrigerate for at least 3 hours before serving.
