Description

This corn cream with poblano strips is a comforting and flavorful dish, perfect for cool days. The combination of the sweetness of the corn with the spicy touch of the roasted poblano peppers is simply delicious. I often prepare it at home, especially during the autumn and winter season, and it is always a success. Furthermore, it is very easy to make with the Thermomix®. The creamy texture and irresistible aroma make this soup an ideal option as a starter or even as a light main course. Go ahead and try it, you will love it! You can add some pieces of fresh cheese on top to give it an extra touch of flavor.

Ingredients (10 ingredients)

  • 190 gramos Cream cheese
  • 2 cucharadas soperas Butter
  • 0.25 piece Onion (finely chopped)
  • 1 cup Corn kernels
  • 3 unidades Poblano pepper (roasted and deveined)
  • 1 cucharada postre Cornstarch
  • 4 tazas Tomato puree
  • 8 tazas Chicken broth
  • 1 cucharadita Chicken bouillon powder
  • 1 pinch Pepper

Preparation (6 steps)

Onion and corn in butter

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tablespoons of butter and ¼ unit of onion (finely chopped) to the bowl. Program 3 Min./120°C/Stufe 1 to sauté the onion until transparent.

Add corn and sauté

Thermomix® Setting
2 min/248°F/Speed 1 120

Add 1 cup of corn kernels to the bowl and program 2 Min./120°C/Stufe 1 to sauté together with the onion.

Incorporate strips, puree and cornstarch

Add 3 units of poblano pepper (roasted and deveined), 4 cups of tomato puree and 1 dessert spoon of cornstarch previously hydrated in a teaspoon of water to the bowl. Mix well with the spatula.

Season and cook

Thermomix® Setting
10 min/212°F/Speed 2 100

Season with 1 teaspoon of chicken bouillon powder and 1 pinch of pepper. Add 8 cups of chicken broth to the bowl. Program 10 Min./100°C/Stufe 2 to cook the soup.

Add cream cheese

Thermomix® Setting
2 min/140°F/Speed 3 60

Incorporate 190 grams of cream cheese to the bowl and program 2 Min./60°C/Stufe 3 to integrate the cheese to the soup.

Serve

Serve hot. Optionally, add pieces of Oaxaca cheese when serving.
