Description

This caramel cream with pomegranate and mint is a refreshingly light dessert that is not only visually appealing. The sweetness of the caramel harmonizes wonderfully with the acidity of the pomegranate and the fresh mint. I especially like to make this dessert in the fall when pomegranates are in season. The preparation is straightforward and succeeds with the Thermomix® in no time. Perfect if you are expecting guests and want to conjure up a special dessert. The cream can be prepared well in advance and stored in the refrigerator.

Ingredients (10 ingredients)

  • 80 g brown sugar
  • 2 tsp brown sugar
  • 2 tbsp Butter
  • 300 ml Milk
  • 200 g Whipping cream
  • 1 pinch Salt
  • 40 g Cornstarch
  • 2 Stiele Mint
  • 1 piece Pomegranate
  • 2 tbsp Apple juice

Preparation (6 steps)

Caramelize sugar

Thermomix® Setting
5 min/248°F/Speed 1 120

Place 80 g brown sugar in the mixing bowl and caramelize for 5 minutes/120°C/speed 1. Then add 2 tablespoons of butter and stir for 30 seconds/speed 3. Add 200 ml milk, 200 g whipping cream and 1 pinch of salt and bring to a boil for 5 minutes/90°C/speed 2.

Stir in starch and cook pudding

Thermomix® Setting
1 min/212°F/Speed 3 100

Stir 100 ml milk and 40 g cornstarch in a separate bowl until smooth. Add the starch mixture to the mixing bowl and stir in for 1 minute/100°C/speed 3. Then let it simmer for 1 minute/100°C/speed 2.

Cool and portion pudding

Let the pudding cool in the mixing bowl for about 10 minutes. Then fill into 4 glasses (each with a capacity of approx. 200 ml). Cover the glasses directly with cling film and refrigerate for approx. 2 hours.

Chop mint

Thermomix® Setting
3 sec/Speed 5

Wash 2 sprigs of mint, shake dry and place in the mixing bowl. Chop for 3 seconds/speed 5. Scrape down from the edge with the spatula.

Prepare pomegranate-mint topping

Halve 1 pomegranate and knock out the seeds. Mix the pomegranate seeds, chopped mint, 2 tablespoons of apple juice and 2 teaspoons of brown sugar in a bowl.

Serve pudding

Before serving, spread the pomegranate-mint topping on the pudding.
