Description

This mushroom cream sauce with fresh mushrooms is a delicious and quick side dish or sauce prepared in the Thermomix®. Fresh mushrooms, garlic, and crème fraîche create a creamy sauce that goes well with many dishes. The recipe is vegetarian and ready in about 25 minutes. Ideal for a quick lunch or dinner.

Ingredients (10 ingredients)

  • 400 g small mushrooms
  • 1 Stk. garlic clove
  • 40 g butter
  • 1 EL oil
  • 0.25 l organic vegetable broth
  • 150 g Crème fraîche
  • 1 EL lemon juice
  • nach Geschmack salt
  • nach Geschmack pepper
  • parsley

Preparation (7 steps)

Prepare mushrooms

Clean and halve the mushrooms. Peel the garlic.

Chop garlic

Place the garlic clove in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Add butter and oil

Add the butter and oil to the mixing bowl and sauté for 3 min./120°C/speed 1.

Sauté mushrooms

5 min/Varoma/Linkslauf Speed 1 Varoma Reverse

Add the halved mushrooms to the mixing bowl and sauté for 5 min./Varoma/Reverse Blade speed 1. Use the spatula to help if necessary.

Deglaze with broth and simmer

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the vegetable broth to the mixing bowl and simmer for 5 min./100°C/Reverse Blade speed 1.

Add Crème fraîche and season

Thermomix® Setting
2 min/194°F/Linkslauf Speed 1 90 Reverse

Add the Crème fraîche to the mixing bowl and stir in for 2 min./90°C/Reverse Blade speed 1. Season with lemon juice, salt, and pepper.

Sprinkle the mushroom cream sauce with chopped parsley and serve.
