Description

This cream of red lentils and pumpkin is a comforting and flavorful dish, perfect for cooler days. The combination of lentils with pumpkin and spices creates a symphony of flavors that you will love. I often prepare it in autumn, when pumpkin is at its best. It is a very simple recipe to make with the Thermomix®, ideal for a quick and nutritious meal. In addition, it is naturally vegetarian and vegan, so it is suitable for everyone! You can add a splash of lemon juice at the end to enhance the flavors.

Ingredients (15 ingredients)

  • 2 piece Small spring onions
  • 1 clove Clove of garlic
  • 1 trocito Fresh ginger
  • 100 g Carrot
  • 250 g Peeled pumpkin
  • 100 g Red or coral lentils
  • 1 piece Lemon or lime juice
  • 100 ml White wine
  • 500 ml Vegetable broth
  • 1 cucharadita Ground turmeric
  • 1 cucharadita Ground cumin
  • 0.5 cucharadita Ground coriander
  • 1 pinch Ground black pepper
  • 1 pinch Salt
  • 1 chorrito Extra virgin olive oil

Preparation (7 steps)

Chop spring onion, garlic and ginger

Put 2 small spring onions in the glass and chop 3 sec./Stufe 5. Add 1 clove of garlic and a piece of fresh ginger and chop 3 sec./Stufe 7. With the spatula, lower the ingredients from the walls of the glass.

Sauté the vegetables

Thermomix® Setting

Add a splash of extra virgin olive oil to the glass and sauté 3 Min./120°C/Stufe 1.

Add carrot and pumpkin

Thermomix® Setting
5 sec/Speed 4

Add 100 g of chopped carrot and 250 g of peeled and chopped pumpkin to the glass. Chop 5 sec./Stufe 4.

Cook the vegetables with spices and white wine

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Add 1 tsp of ground turmeric, 1 tsp of ground cumin, ½ tsp of ground coriander, ground black pepper and salt to taste. Add 100 ml of white wine and program 2 Min./Varoma/Stufe 1.

Add the lentils and broth

30 min/212°F/Speed 1 100

Add 100 g of red or coral lentils and 500 ml of vegetable broth. Program 30 Min./100°C/Stufe 1.

Crush the cream

Thermomix® Setting
1 min/Speed 10

Crush 1 Min./Stufe 10, progressively increasing the speed.

Adjust the seasoning and serve

Thermomix® Setting
2 min/158°F/Speed 1 70

Taste and adjust salt, pepper and spices to taste. Add lemon or lime juice to taste. Heat 2 Min./70°C/Stufe 1 if necessary before serving.
