Description

This chicken and lemon risotto is a comforting and flavorful dish. I love the freshness of the lemon which goes perfectly with the sweetness of the rice and the tender chicken. It's a perfect dish for a quick lunch or a family dinner. Preparation is quick and easy with the Thermomix®, making it an ideal dish for weeknights. Feel free to add some seasonal vegetables for an even more gourmet version. A real treat!

Ingredients (8 ingredients)

  • 2 piece chicken cutlets
  • 0.5 piece lemon
  • 1 c à s fresh cream
  • 35 cl water
  • 1 cube for broth
  • 1 c à s olive oil
  • 5 cl white wine
  • 120 g round rice

Preparation of the broth

5 min/212°F/Speed 1 100

Pour 35 cl of water into the Thermomix bowl. Add 1 cube for broth and the juice of half a lemon. Heat everything for 5 Min./100°C/Stufe 1.

Cooking the rice

3 min/248°F/Speed 1 120

Add 1 tbsp of olive oil and 120g of round rice to the Thermomix bowl. Sauté the rice for 3 Min./120°C/Stufe 1, stirring gently with the spatula until it becomes translucent.

Deglaze with white wine

Thermomix® Setting
1 min/212°F/Speed 1 100

Add 5 cl of white wine and cook for 1 Min./100°C/Stufe 1, without the measuring cup to let the alcohol evaporate.

Cooking the risotto

15 min/212°F/Speed 1 100 Reverse

Pour the hot broth little by little into the Thermomix bowl, letting the rice absorb the liquid between each addition. Cook for 15 Min./100°C/Stufe 1/Linkslauf. Adjust the amount of broth if necessary to obtain the desired consistency.

Chicken preparation

Meanwhile, cook 1.5 chicken cutlets in a pan. Once cooked, put them in the Thermomix bowl and chop for 5 Sek./Stufe 5. Cook the remaining half-cutlet in the pan and cut it into dice.

Finalizing the risotto

1 min/140°F/Gentle stir speed 60 Reverse

When the rice is cooked, add 1 tbsp of fresh cream and the minced chicken to the Thermomix bowl. Mix gently for 1 Min./60°C/Sanftrührstufe/Linkslauf. Add the diced chicken and serve immediately.
