Description

These fish croquettes are a classic that never fails at home. The creamy béchamel, combined with the mild flavor of cod, makes them irresistible. The recipe is a bit laborious, as it requires cooling time, but the result is worth it. They are perfect for a special appetizer or as a starter in a family meal. My children love them! You can use any white fish you like, although cod gives it a special touch. Go ahead and prepare them, I assure you that you will succeed!

Ingredients (11 ingredients)

  • 350 g Fresh cod
  • 90 g Butter
  • 1 l Milk
  • 100 g Wheat flour
  • 1 pinch Ground nutmeg
  • 1 pinch Ground black pepper
  • 1 pinch Salt
  • 100 g Wheat flour for frying
  • 2 piece Beaten egg for frying
  • 100 g Breadcrumbs for frying
  • 200 ml Extra virgin olive oil for frying

Cooking the cod

Thermomix® Setting
4 min/176°F/Speed 1 80

Place 350 g of fresh cod in the glass. Add water with salt to cover the cod. Program 4 Min./80°C/Stufe 1.

Preparation of the roux

Thermomix® Setting
5 min/194°F/Speed 2 90

Remove the cooked cod and shred it. Reserve. Without washing the glass, add 90 g of butter and 100 g of wheat flour. Program 5 Min./90°C/Stufe 2.

Heat the milk with spices

While the roux is being prepared, heat 1 l of milk in a saucepan with ground nutmeg, ground black pepper and salt to taste. It is not necessary to use the Thermomix for this step.

Incorporation of the milk to the roux

Thermomix® Setting

Pour the hot milk into the glass with the roux. Program 8 Min./90°C/Stufe 4. Stir with the spatula if necessary to prevent sticking.

Add the shredded cod

Thermomix® Setting
20 min/194°F/Linkslauf Speed 2 90 Reverse

Add the shredded cod to the glass. Program 20 Min./90°C/Linkslauf Stufe 2. Stir with the spatula every 5 minutes to ensure even cooking.

Chill the dough

Pour the dough into a buttered dish. Cover with cling film and chill in the refrigerator for 24 hours.

Form the croquettes

After cooling, form the croquettes. Pass each croquette through wheat flour, beaten egg and breadcrumbs. Reserve in the refrigerator for 30 minutes before frying them.

Fry the croquettes

Heat plenty of extra virgin olive oil in a frying pan. Fry the croquettes until golden brown on all sides. Serve hot.
