Description

This creamy gnocchi pan with spinach and tomatoes is a quick vegetarian main course from the Thermomix®. With fresh baby spinach, cherry tomatoes and gnocchi, a delicious one-pot dish is created in just 30 minutes. The recipe is ideal for light cuisine and yields 2 servings. Pine nuts and cream cheese with herbs round off the taste.

Ingredients (11 ingredients)

  • 3 EL Pine nuts
  • 1 Stück Onion
  • 150 g Baby spinach
  • 200 g Cherry tomatoes
  • 150 ml Water
  • 150 g Cream cheese with herbs
  • 2 EL Olive oil
  • 600 g Gnocchi
  • Salt
  • Pepper
  • Nutmeg

Roast pine nuts

Put 3 tbsp of pine nuts into the mixing bowl and roast for 3 min./120°C/speed 1 without the measuring cup until golden brown. Remove and set aside.

Chop onions

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 2 tbsp olive oil to the onions and sauté for 3 min./120°C/speed 1.

Add gnocchi and spinach

5 min/212°F/Gentle stir speed 212°F Reverse

Add 600 g gnocchi and 150 g washed and coarsely chopped baby spinach to the mixing bowl and cook for 5 min./100°C/reverse/gentle stir setting.

Prepare sauce

5 min/212°F/Gentle stir speed 212°F Reverse

Add 150 g cream cheese with herbs, 150 ml water and 200 g halved cherry tomatoes and simmer for 5 min./100°C/reverse/gentle stir setting.

Season and serve

Season with salt, pepper and nutmeg and serve with the roasted pine nuts.
