Description

This creamy Gorgonzola sauce is a quick and easy dish that is ready in about 20 minutes. The sauce is an excellent accompaniment to pasta or meat dishes. With Gorgonzola, cream and a hint of garlic, it is a delight for cheese lovers. The recipe is designed for 2-3 servings and is ideal for a quick lunch or dinner.

Ingredients (11 ingredients)

  • 200 g Gorgonzola
  • 250 ml Whipping cream
  • 100 ml Vegetable or meat broth
  • 1 Stück Onion/Shallot
  • 2 Zehen Garlic
  • 1 EL Butter
  • 2 EL Parmesan
  • nach Geschmack Pepper (freshly ground)
  • nach Geschmack Nutmeg
  • nach Geschmack Salt
  • White wine

Preparation (7 steps)

Chop onion and garlic

Put 1 small onion/shallot in the mixing bowl and chop for 3 sec./speed 5. Add 1-2 cloves of garlic and chop for 3 sec./speed 7. Use the spatula to push everything down from the edge.

Sauté onion and garlic

Add 1 tbsp butter to the mixing bowl and sauté for 3 min./120°C/speed 1. Use the spatula to push everything down from the edge.

Deglaze with white wine and reduce

Thermomix® Setting
1 min/Varoma/Speed 1 Varoma

Optional: Add a splash of white wine to the mixing bowl and reduce for 1 min./Varoma/speed 1 without measuring cup.

Add broth and cream

Thermomix® Setting
3 min/194°F/Speed 2 194°F

Add 50-100 ml vegetable or meat broth and 200-250 ml whipping cream to the mixing bowl and bring to a boil for 3 min./90°C/speed 2. Leave the measuring cup on.

Melt Gorgonzola

4 min/140°F/Linkslauf Speed 1 140°F Reverse

Add 150-200 g Gorgonzola (in pieces) to the mixing bowl and melt for 4 min./60°C/reverse rotation speed 1. Leave the measuring cup on.

Refine and season

Thermomix® Setting
20 sec/Linkslauf Speed 2 Reverse

Optional: Add 1-2 tbsp grated Parmesan, pepper (freshly ground), nutmeg and a little salt (be careful, Gorgonzola is already salty!) to the mixing bowl and mix for 20 sec./reverse rotation speed 2. Leave the measuring cup on.

Thicken (if necessary)

If the sauce is too liquid, simmer for 1-2 min./90°C/speed 2 without the measuring cup until the desired consistency is reached.
