Ingredients (12 ingredients)

  • 400 ml Chicken broth
  • 250 g Poultry stock
  • 250 g Chicken meat
  • 150 g Carrots
  • 150 g Mushrooms, white
  • 150 g Frozen peas
  • 25 g Butter
  • 25 g Flour
  • 100 ml Cream
  • 1 Spritzer Lemon juice
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (8 steps)

Prepare the chicken meat

Cut the chicken meat into small cubes. You can use leftover soup meat, fried or cooked chicken breast fillet, or grilled chicken. The skin is not used.

Prepare the vegetables

Peel the carrots and cut them into very small cubes. Clean the mushrooms and quarter or eighth them, depending on their size. Weigh out the frozen peas. Have the chicken broth ready.

Prepare the roux

Place 25 g of butter in the mixing bowl and melt for 3 min./50°C/speed 1.

Thicken the roux

Add 25 g of flour to the melted butter in the mixing bowl and sauté for 3 min./100°C/speed 2.

Add broth

Add 400 ml of chicken broth to the mixing bowl and stir in for 3 min./100°C/speed 3. Make sure that no lumps form. Use the spatula if necessary.

Add vegetables and cream

Add 100 ml of cream, 150 g of mushrooms, 150 g of carrots and 150 g of frozen peas to the mixing bowl and simmer for 8 min./100°C/speed 1. Stir occasionally with the spatula.

Add chicken meat and stock

Add 250 g of chicken meat and 250 g of poultry stock to the mixing bowl and let it steep for 5 min./100°C/Reverse speed speed 1 to heat the meat.

Season

Season the chicken fricassee with a splash of lemon juice, salt and pepper and serve.
