Description

The creamy pumpkin-mushroom-rice composition with Hokkaido pumpkin, button mushrooms and rice is a vegetarian main course that is quick to prepare in the Thermomix®. Red onion and garlic provide a hearty note. In just 30 minutes, a creamy dish for 4 servings is created. Ideal for autumn cuisine and lovers of mushroom dishes. Perfect as a filling family meal.

Ingredients (10 ingredients)

  • 250 g Rice
  • 1 Stück red onion
  • 2 Zehen Garlic
  • 250 g brown button mushrooms
  • 500 g Hokkaido pumpkin
  • 2 EL Clarified butter
  • 200 g Cream
  • 2 EL chopped Parsley
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (8 steps)

Cook Rice

Cook rice in a separate pot according to package directions. In the meantime, continue with the next steps.

Chop Onion and Garlic

Place the peeled red onion in the mixing bowl and chop for 3 seconds/speed 5. Then add the garlic cloves and chop for another 3 seconds/speed 7.

Sauté Onion and Garlic

Add 2 tablespoons of clarified butter to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare Mushrooms

Clean the brown button mushrooms and slice them. Set aside.

Prepare Pumpkin

Wash, core and cut the Hokkaido pumpkin into bite-sized pieces. Set aside.

Add Pumpkin and Mushrooms

Add the sliced mushrooms and pumpkin to the mixing bowl and steam for 5 min./120°C/reverse rotation speed 1.

Add Cream and Parsley

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 194°F

Add 200 g of cream and 2 tablespoons of chopped parsley to the mixing bowl and simmer for another 5 min./90°C/reverse rotation speed 1 until the pumpkin has the desired consistency.

Season and Serve

Season the pumpkin and mushroom pan with salt and pepper. Serve with the cooked rice.
