Description

This creamy leaf spinach with fried egg is a quick and easy dish that is perfect for everyday use. I like to make it when things need to be done quickly and still want something healthy on the table. The combination of the savory spinach and the creamy egg yolk is simply unbeatable. With fresh potatoes, it is a complete and filling dish. If you like, you can add some garlic or bake the spinach with grated cheese. A real classic that always tastes good!

Ingredients (8 ingredients)

  • 1 kg firm cooking potatoes
  • 3 Stiel Parsley
  • 3 tbsp Rapeseed oil
  • 500 g Frozen leaf spinach
  • 200 g Whipping cream
  • to taste Pepper Black Mill
  • to taste Nutmeg
  • 4 piece Eggs (size M)

Preparation (7 steps)

Prepare potatoes

Peel, wash and cut the potatoes into bite-sized pieces. Put in a pot and cover with salted water. Bring to a boil and cook for about 20 minutes until soft.

Prepare onion and parsley

Thermomix® Setting

Peel and halve the onion. Place the onion halves in the mixing bowl and chop for 3 sec./speed 5. Wash the parsley, shake dry and pluck the leaves from the stems. Set aside some parsley for garnish and chop the rest roughly.

Sauté onion

3 min/248°F/Speed 1 120

Add 1 tbsp oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Cook spinach

Thermomix® Setting
10 min/212°F/Gentle stir speed 100 Reverse

Add frozen leaf spinach and 2–3 tbsp water to the onions in the mixing bowl. Cook for 10 min./100°C/gentle stir setting. Season with salt, pepper and nutmeg.

Stir in cream

Thermomix® Setting
1 min/194°F/Gentle stir speed 90 Reverse

Add whipping cream to the mixing bowl and stir in for 1 min./90°C/gentle stir setting.

Fry fried eggs

Heat 2 tbsp oil in a pan. Crack the eggs into it and let them set as fried eggs for 2–3 minutes. Season with salt and pepper.

Arrange

Drain the potatoes, arrange on 4 plates with spinach and fried eggs. Garnish with parsley.
