Description

This semolina pudding with fruity mango puree and fresh raspberries is a real treat! I especially like to make it in the summer when the mangoes are nice and ripe and aromatic. The semolina pudding is creamy and slightly sweet, the mango puree provides an exotic note and the raspberries provide a fruity freshness. A great breakfast or a light dessert that is quick to prepare and tastes good to the whole family. If you like, you can sprinkle some coconut flakes or chopped nuts on top. Simply delicious!

Ingredients (7 ingredients)

  • 700 ml Milk
  • 3 tbsp Agave syrup
  • 80 g Soft wheat semolina
  • 2 tbsp Flaked almonds
  • 1 piece Mango (ripe)
  • 1 piece Organic lime
  • 100 g Fresh raspberries

Preparation (8 steps)

Put milk and agave syrup into the mixing bowl

Put 700 ml milk and 3 tbsp agave syrup into the mixing bowl.

Bring milk to the boil

Bring the milk and agave syrup to the boil for 5 mins/90°C/speed 2.

Stir in the semolina and simmer

Thermomix® Setting
5 min/194°F/Gentle stir speed 90 Reverse

Slowly sprinkle in 80 g soft wheat semolina and simmer for 5 mins/90°C/gentle stir setting/reverse. Use a spatula to push the semolina away from the edge.

Let semolina pudding cool

Pour the semolina pudding into glasses or bowls and let it cool.

Roast flaked almonds

Roast 2 tbsp flaked almonds in a pan without fat, stirring constantly, until lightly browned. Then let it cool.

Prepare mango

Peel 1 mango and cut the flesh from the core. Squeeze 1 organic lime.

Prepare mango puree

Put mango flesh and lime juice into the mixing bowl and puree for 20 sec/speed 8.

Garnish semolina pudding

Pour mango puree over the cooled semolina pudding and garnish with roasted flaked almonds and 100 g fresh raspberries.
