Description
This creamy Alpine soup is a quick and warming dish, perfect for cold days. With mashed potato flakes and cream cheese, it becomes particularly creamy and gets a slightly sour note. The chives provide a fresh spice. I like to make it as a starter or as a light meal when things need to be quick. If you like, you can sprinkle some dried meat from Grisons on top. A hearty dish that is easy to prepare and guaranteed to taste good!
Ingredients (5 ingredients)

0.5 Liter Vegetable broth

1 Handvoll Mashed potato powder

150 g Cream cheese
-
2 tbsp Chives
-
30 g Salt and pepper
Preparation (3 steps)
Heat vegetable broth
Add 500 ml vegetable broth to the mixing bowl and heat for 5 min./100°C/level 1.
Stir in mashed potatoes and cream cheese
Add 1 handful of mashed potato powder and 150 g cream cheese to the mixing bowl and stir for 20 sec./level 3.
Heat and season soup
Heat the soup for another 2 min./80°C/level 2. Then add 30 g salt and pepper and 2 tbsp chives and stir in for 10 sec./level 2 in reverse.
