Description

This creamy broccoli soup is a real treat! I especially like to make it when it gets colder outside. The broccoli is wonderfully finely pureed in the Thermomix® and the soup gets a great consistency. The crispy topping made from roasted toast and garlic provides the special touch. The preparation is super easy and quick, so the soup is also perfect for after work. If you like, you can add a dash of cream. A delicious and warming dish for the whole family!

Ingredients (7 ingredients)

  • 1 kg Broccoli
  • 1.5 l Organic vegetable stock
  • 2 slice Toast bread
  • 1 clove Garlic
  • Salt
  • White pepper
  • 20 g Butter or margarine

Preparation (6 steps)

Prepare broccoli

Clean, wash and divide 1 kg broccoli into florets. Dice broccoli stalks. Set aside a few florets for later garnish.

Cook broccoli

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 1 ½ l organic vegetable stock to the mixing bowl and bring to the boil for 5 min./100°C/speed 1. Add the prepared broccoli (except for the florets set aside) and cook for 10 min./100°C/speed 1.

Puree soup

Thermomix® Setting
30 sec/Speed 8-10

Finely puree the broccoli in the cooking liquid for 30 sec./speed 8-10. Use the spatula to push everything down.

Season and heat soup

Thermomix® Setting
3 min/194°F/Speed 1 90

Season the soup with salt and white pepper. Return the reserved broccoli florets to the soup and heat for 3 min./90°C/speed 1.

Prepare crispy topping

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Dice 2 slices of toast. Peel 1 clove of garlic and put it in the mixing bowl. Chop for 3 sec./speed 7. Add 20 g butter or margarine and sauté for 3 min./120°C/speed 1. Add the bread cubes and roast for 5 min./120°C/reverse rotation speed 1 until golden brown.

Arrange and serve

Arrange the soup in soup cups and serve sprinkled with the croutons.
