Description

This creamy lentil soup with coconut milk is an absolute comfort food! I especially like to make it when it's cold outside. The combination of red lentils, coconut milk and warming spices like turmeric and cumin is simply unbeatable. The soup is not only super delicious, but also quick and easy to prepare. Perfect for a quick lunch or a light dinner. If you like it a little spicier, you can add a pinch more chili. A dash of lime juice rounds it off perfectly. Try it, you will be thrilled!

Ingredients (15 ingredients)

  • 500 ml Vegetable broth
  • 200 g red lentils
  • 200 g Carrots
  • 400 g Coconut milk
  • 400 g chopped tomatoes
  • 1 piece red Onion
  • 1 clove Garlic
  • 20 g Ginger
  • 2 tbsp Vegetable oil
  • 2 tsp Turmeric
  • 1 tsp Cumin, ground
  • 0.5 tsp Sugar
  • 0.25 tsp Chili, ground
  • 1 tbsp Lime juice
  • 1 pinch Salt

Preparation (10 steps)

Prepare lentils

Rinse 200 g red lentils in a sieve under cold water until the water is clear. Set aside.

Prepare vegetables

Peel and halve 1 red onion and 1 clove of garlic. Peel 2 carrots (approx. 200 g) and cut into coarse pieces. Peel 1 piece of ginger (approx. 20 g) and roughly chop. Squeeze 1 lime and set the juice aside.

Chop onions, garlic and ginger

Put the halved onions and garlic clove into the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Add and chop carrots and ginger

Put the roughly chopped carrots and the chopped ginger into the mixing bowl and chop for 3 sec./speed 4. Push down with the spatula.

Sauté vegetables

Put 2 tbsp vegetable oil into the mixing bowl and sauté for 3 min./120°C/speed 1.

Put the drained lentils, 2 tsp turmeric, 1 tsp cumin and ¼ tsp chili powder into the mixing bowl and sauté for 2 min./120°C/speed 1 while stirring.

Add broth and tomatoes

Put 500 ml vegetable broth and 400 g chopped tomatoes into the mixing bowl. Season with 1 pinch of salt and ½ tsp sugar. Mix everything well.

Close the mixing bowl lid and simmer the soup for 20 min./100°C/speed 1. Place the simmering basket on top as a splash guard.

Add and heat coconut milk

Put 400 g coconut milk into the mixing bowl and heat for 5 min./90°C/speed 1.
