Description
This creamy potato celeriac soup is a simple and quick dish that is ideal as a starter or light main course. With the Thermomix®, preparation is done in just 20 minutes. The soup is vegetarian and can be easily prepared vegan. Perfect for a quick and healthy enjoyment.
Ingredients (3 ingredients)

300 g Potatoes, floury

200 g Celeriac
-
2 Onion(s)
Preparation (5 steps)
Chop onions
Add 2 onions to the mixing bowl and chop for 3 sec./speed 5.
Sauté onions
Leave the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.
Add and chop vegetables
Add 300 g floury potatoes and 200 g celeriac in coarse pieces to the mixing bowl and chop for 5 sec./speed 4.
Cook soup
Fill with water until the vegetables are covered. Cook for 15 min./100°C/speed 1.
Puree soup
Puree the soup for 30 sec./speed 8-10 until a creamy consistency is achieved. Puree longer if necessary.
