Description

This creamy broccoli potato soup is an absolute comfort food! I especially like to make it in the fall, when broccoli is in season. The combination of broccoli and potatoes makes the soup nice and creamy and filling. With the Thermomix®, preparation is super easy and fast. If you like, you can refine the soup with a dash of cream, but it also tastes delicious without it. It is perfect as a light appetizer or as a warming main course on cold days. A great vegetarian dish that kids will also enjoy!

500 g Broccoli
2 piece large Potato(es)
1 l Vegetable broth

Preparation (4 steps)

Prepare potatoes

Peel the potatoes and cut into small pieces.

Cook broccoli and potatoes

20 min/212°F/Speed 1 100

Add 500 g broccoli, the sliced 2 large potatoes and 1 liter of vegetable broth to the mixing bowl. Cook for 20 min./100°C/speed 1 until the vegetables are soft.
