Description
This creamy Tuscan Tortellini Soup from the Thermomix® is a quick and hearty main course with an Italian flair. Onions, garlic, tomato paste and Italian herbs form the basis for this delicious soup. In just 30 minutes, a warm meal for 4 people is on the table. Ideal for quick, uncomplicated cuisine and a filling family meal.

2 EL Tomato paste

2 TL Italian herb mix

1 Prise Salt

500 ml Vegetable broth
-
400 g Passata
-
100 ml Cream
-
250 g Tortellini (with cheese filling)

150 g Baby spinach
-
nach Geschmack Grated cheese (for serving)
Preparation (8 steps)
Chop onion and garlic
Place onion in the mixing bowl and chop for 3 sec./speed 5. Scrape down with the spatula.
Sauté onion
Add oil and sauté for 3 min./120°C/speed 1.
Add tomato paste and spices
Add tomato paste, Italian herb mix, salt and pepper and sauté for 1 min./100°C/speed 1.
Deglaze with broth
Add vegetable broth to the mixing bowl and cook for 5 min./100°C/speed 1.
Add passata and cream
Add passata and cream and simmer for 5 min./90°C/speed 1.
Add tortellini
Add tortellini and the fried meat to the mixing bowl and heat for 5 min./90°C/reverse speed 1.
Add spinach
Add baby spinach and stir in for 1 min./90°C/reverse speed 1 until it collapses.
Serve
Serve soup with grated cheese.
