Description

This creamy winter vegetable risotto is a wonderfully warming dish for cold days. I especially like to make it when I still have some vegetables in the fridge that need to be used up. The combination of onions, leeks, carrots and creamy rice is simply unbeatable. The Parmesan cheese provides a nice spice and the cream makes the risotto especially creamy. A quick and easy dish that is perfect for a cozy dinner. If you like, you can sprinkle some fresh herbs over it.

Ingredients (11 ingredients)

  • 1 piece small Onion
  • 150 g small stick Leek
  • 150 g Carrots
  • 1 tbsp Oil
  • 100 g Risotto rice
  • 1 pinch Salt
  • 1 pinch Pepper
  • 300 ml Vegetable broth (instant)
  • 40 g Parmesan cheese or vegetarian hard cheese
  • 50 g Whipping cream
  • 1 Stiel Parsley

Preparation (6 steps)

Chop onion, leek and carrots

Put onion in the mixing bowl and chop for 3 sec./speed 5. Add leek and carrots and chop for 5 sec./speed 4.

Add oil and sauté for 3 min./120°C/speed 1.

Add risotto rice, salt and pepper and sauté for 2 min./120°C/speed 1.

20 min/212°F/Gentle stir speed 100 Reverse

Add vegetable broth and cook for 20 min./100°C/gentle stir setting/reverse rotation. Use a spatula to support the risotto during cooking.

1 min/140°F/Gentle stir speed 60 Reverse

Add Parmesan cheese and whipping cream and stir in for 1 min./60°C/gentle stir setting/reverse rotation.

Put parsley in the mixing bowl and chop for 3 sec./speed 8. Then stir into the risotto.
