Description

These crêpes stuffed with caramelized apples are a heartwarming autumn delight! I often prepare them for Sunday brunch or as a gourmet dessert after a good meal. The apple compote, slightly tart and flavored with cinnamon, goes perfectly with the diced apples caramelized in calvados. A real treat! The crêpe batter, light and airy, is easy to make with the Thermomix®. Feel free to use different varieties of apples to vary the pleasures. These crêpes are perfect for a festive dessert or simply to indulge in all simplicity.

Ingredients (11 ingredients)

  • 2 piece eggs
  • 125 g fluid flour
  • 1 c à soupe brown sugar
  • 15 g butter
  • 15 cl milk
  • 10 cl beer
  • 1 pinch salt
  • 6 piece apples
  • 40 g brown sugar
  • cinnamon
  • clavados

Preparation of the apple compote

Thermomix® Setting
20 min/212°F/Speed 1 100

Peel 4 apples and cut them into pieces. Place the apple pieces in the Thermomix bowl. Add 40g of brown sugar and a pinch of cinnamon. Add a little water (about 50ml). Program 20 Min./100°C/Stufe 1. At the end of cooking, pass the compote through a sieve or mill to obtain a smooth texture.

Preparation of caramelized diced apples

Peel the last apple and cut it into dice. Melt 15g of butter in a pan (outside Thermomix). Add the diced apples and sauté until lightly golden. Sprinkle with brown sugar and sprinkle with calvados. Flambé off the heat (outside Thermomix). Then mix the caramelized diced apples with the compote.

Preparation of the crêpe batter

20 sec/Speed 4

In the Thermomix bowl, add 2 eggs, 125g of fluid flour, 1 tablespoon of brown sugar, 15g of melted butter, 15 cl of milk, 10 cl of beer and 1 pinch of salt. Mix 20 Sek./Stufe 4.

Resting the dough

Let the crêpe batter rest for 1 hour at room temperature.

Cooking the crêpes

Cook the crêpes in a pan (outside Thermomix).

Garnishing and presentation

Garnish each crêpe with apple compote and close them in purses. You can use skewers or decorate with a caramel ring (pour caramel on aluminum forming a circle. Let dry and detach).
