Description

These light water crêpes are a simple and quick alternative to traditional crêpes. They are perfect for a delicious breakfast or an impromptu dessert. The batter is easy to make in the Thermomix®, which avoids lumps and guarantees a smooth and airy texture. I like to serve them with sugar, jam or hazelnut spread. They are ideal for people who want a lighter option without sacrificing the pleasure of a good crêpe. A real delight for the whole family!

Ingredients (5 ingredients)

  • 250 g flour
  • 3 c. à s. sugar
  • 1 packet vanilla sugar
  • 400 ml water
  • 3 piece eggs

Preparation (5 steps)

Mix the dry ingredients

Pour 250 g of flour, 3 tbsp of sugar and 1 sachet of vanilla sugar into the Thermomix bowl. Mix for 10 Sek./Stufe 4.

Add the eggs and water

Thermomix® Setting
30 sec/Speed 4

Add 3 eggs one by one into the Thermomix bowl. Gradually pour in 400 ml of water while mixing for 30 Sek./Stufe 4. Scrape down the sides of the bowl with a spatula if necessary.

Let the batter rest

Transfer the crêpe batter to a container and let it rest for at least 10 minutes. This allows the flour to hydrate properly and obtain a smoother batter.

Cook the crêpes

Heat a crêpe maker or frying pan over medium heat. Once hot, lightly grease the surface with a little oil using a paper towel. Pour a ladle of crêpe batter into the pan and cook for about 2 minutes on one side, then 1 minute on the other, until golden brown.

Serve the crêpes

Place the cooked crêpes on a plate and continue cooking until all the batter is used up. Serve the crêpes hot with the garnish of your choice.
