Description

These light crepes with prawns and basil pesto are an explosion of Mediterranean flavors! The batter, prepared with the Thermomix®, is smooth and velvety. The pesto, fresh and fragrant, goes perfectly with the sweetness of the steamed prawns. Perfect for a Sunday brunch or a light dinner, these crepes are a delicious and easy to prepare alternative.   • 6 piece Crepes
  • Prawns
  • Basil
  • Extra virgin olive oil
  • Grated Parmesan cheese
  • 1 clove Garlic
  • 1 cube Ice
  • Pine nuts
  • Salt
  • Pepper
  • Milk
  • Flour
  • Butter at room temperature
  • Eggs
  • Salt

Preparation (5 steps)

Preparation of the crepe batter

Thermomix® Setting
20 Sec./Speed 4, 30 Sec./Speed 4, 10 Sec./Speed 3

In the Thermomix bowl, insert the eggs and milk. Mix for 20 Sec./Stufe 4. Add the sifted flour a little at a time and mix for 30 Sec./Stufe 4, until a smooth and homogeneous batter is obtained. Add the melted butter at room temperature and a pinch of salt. Mix for 10 Sec./Stufe 3. Cover with transparent film and leave to rest in the refrigerator for at least 30 minutes.

Cooking the crepes

Grease a 22 cm diameter crepe pan with butter. With the help of a ladle, pour the mixture onto the pan, tilting it slightly so as to distribute the mixture evenly over the entire surface. Leave to cook over medium-low heat for about 2 minutes, lift the crepes on one side to check the color and, as soon as it takes on a light golden color on the bottom, turn it on the other side, continue cooking for about 1 minute.

Preparation of steamed prawns

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Clean the prawns from the carapace and the internal bowel. Pour 500 ml of water into the Thermomix bowl. Place the Varoma and arrange the prawns in it. Steam for 5 Min./Varoma/Stufe 1. Season the prawns with salt and pepper.

Preparation of light pesto

20 Sec./Speed 8, 10 Sec./Speed 3

In the Thermomix bowl, insert the basil, pine nuts, grated cheese, clove of garlic and the ice cube. Blend for 20 Sec./Stufe 8. Add the extra virgin olive oil and adjust with salt. Mix for 10 Sec./Stufe 3.

Filling and presentation

Put a little of the prepared pesto on half of each crepe and place the prawns on top. Close like a wallet. Serve the crepes with some pine nuts, freshly ground pepper and basil leaves as a garnish.
