Description

This roast chicken, revisited with a crispy breadcrumb topping and a touch of mustard, is a quintessential family dish. I often prepare it for Sunday lunch, and it always makes a splash. The breadcrumbs, soaked in melted butter, give it an irresistible texture. The mustard adds a slightly tangy note that perfectly balances the richness of the chicken. It's a simple dish to make, but it impresses with its taste and presentation. Perfect for a friendly and warm meal, it is ready in less than an hour. Ingredients (6 ingredients)

  • 1 piece chicken
  • 75 g breadcrumb
  • 30 g melted butter
  • 2 c. à s. mustard
  • Salt or fine salt
  • Mill pepper

Preparation (10 steps)

Preheat the oven

Preheat your oven to 200°C. This step is crucial to ensure even cooking of the chicken.

Prepare the chicken

Cut off the ends of the wings with a pair of scissors. Start splitting the chicken lengthwise along the back, along the spine.

Remove the spine

Go all the way. Remove the spine, still with the pair of scissors.

Flatten the chicken

Give a knife blow in the center to split the sternum bone. Spread the chicken apart and turn it over.

Tuck in the wings and thighs

Tuck in the end of the wings. Enter the ends of the thighs, for this, make a slit in the skin just below the right thigh and then the left thigh. Insert each end of the thigh into the slits you just made.

Secure with skewers

To be able to move the chicken more easily, prick it in a cross with two large wooden skewers soaked beforehand for 15 minutes, to prevent them from blackening during cooking.

Season the chicken

Salt the chicken on both sides. Place the chicken on a baking sheet lined with baking paper and bake for 25 minutes. Switch your oven to grill mode.

Prepare the breadcrumbs

Thermomix® Setting
10 sec/Speed 3

Remove the chicken from the oven. In the Thermomix bowl, mix 75 g of breadcrumbs, 30 g of melted butter and 2 tbsp of mustard. Mix 10 Sek./Stufe 3 to combine the ingredients well.

Coat and bake

Brush the chicken with the breadcrumb mixture. Bake again for 5 to 8 minutes, until the chicken is golden brown.

Serve

Remove the wooden skewers and serve immediately.
