Description

These potato and cheese croquettes are a delicious and comforting snack, perfect for any occasion! The combination of the soft potato and creamy cheese is simply irresistible. I often prepare them for my friends and family, and they are always a success. They are very easy to make with the Thermomix®, making them an ideal option for a quick dinner or an impromptu appetizer. Also, you can vary the type of cheese to give it a different touch. Go ahead and try them, you will love them! They are vegetarian and prepared in less than an hour.

Ingredients (8 ingredients)

  • 200 gramos peeled potatoes
  • 30 gramos cream cheese
  • 1 clove garlic
  • 1 piece egg
  • 50 gramos wheat flour
  • 50 gramos breadcrumbs
  • 1 pinch salt
  • 1 pinch pepper

Cooking the potatoes and garlic

Peel the potatoes and garlic clove. Cut the potatoes into medium pieces to facilitate cooking. Place the potatoes, garlic and a pinch of salt in the Thermomix glass. Add water to cover the potatoes.

Preparation of the puree

Once the potatoes are cooked, drain the water. Add the cream cheese, salt and pepper to taste in the Thermomix glass.

Form the croquettes

Let the mashed potatoes cool until it can be easily manipulated. Form small tortillas or arepas with the puree. Place a small portion of cream cheese in the center of each tortilla and close, shaping it into a croquette.

Breading the croquettes

In three separate plates, place the wheat flour, the beaten egg and the breadcrumbs. Pass each croquette first through the flour, then through the egg and finally through the breadcrumbs, making sure they are well covered.

Fry the croquettes

Heat abundant oil in a pan over medium heat (approximately 160°C). Fry the croquettes in the hot oil for about 30-40 seconds on each side, or until golden brown. Remove the croquettes and place them on absorbent paper to remove excess oil.
