Description

These creamy ham and cheese croquettes are a Spanish classic that always triumphs. The smooth béchamel and the salty touch of the ham make this snack an irresistible delight. Perfect for a tapas dinner with friends or as a starter in a special meal. The recipe is a bit laborious, but the result is worth it. Go ahead and prepare them and surprise everyone! You can use different types of cheese to vary the flavor. They are delicious with a cured Manchego cheese! The dough can be prepared in advance and stored in the refrigerator until it is time to form the croquettes.

Ingredients (12 ingredients)

  • 2 container milk
  • 60 gramos flour
  • 60 gramos butter
  • 1 piece onion
  • 1 pinch nutmeg
  • 1 pinch salt
  • 4 piece eggs
  • 100 gramos cooked ham
  • 30 gramos grated cheese
  • 2 piece beaten eggs
  • 226.8 gramos oil (for frying)
  • 50 gramos breadcrumbs

Preparation (10 steps)

Cook the eggs

Thermomix® Setting

Place 4 eggs in the simmering basket. Pour 700 ml of water into the bowl. Insert the simmering basket and program 10 Min./Varoma/Speed 1. Remove the eggs, cool, peel, cut into wedges and reserve.

Chop the onion

Peel and cut 1 onion into quarters. Place in the bowl and program 3 Seg./Speed 5. Lower the remains of the walls of the bowl with the spatula.

Sauté the onion

Thermomix® Setting

Add 60 g of butter to the bowl with the chopped onion and sauté 5 Min./120°C/Speed 1.

Add the flour

Thermomix® Setting
2 min/212°F/Velocidad 2 100

Add 60 g of flour to the bowl and program 2 Min./100°C/Speed 2. Stir with the spatula to integrate the flour well.

Pour the milk and cook the béchamel

Thermomix® Setting
15 min/194°F/Velocidad 4 90

Pour 2 glasses of hot milk into the bowl. Add 1 pinch of nutmeg and 1 pinch of salt. Program 15 Min./90°C/Speed 4. Lower the remains of the walls of the bowl with the spatula.

Add ham and cheese

Thermomix® Setting
20 Seg./Velocidad 3/Giro a la izquierda Reverse

Add 100 g of chopped cooked ham and 30 g of grated cheese to the bowl. Mix 20 Seg./Speed 3/Reverse turn. The dough should be homogeneous.

Cool the dough

Pass the pieces of cooked egg through the béchamel dough. Spread the dough in a dish and let it cool completely in the refrigerator for at least 2 hours.

Form the croquettes

Once cold and compact, form the croquettes with the desired shape.

Bread the croquettes

Beat 2 eggs in a bowl. Pass the croquettes first through the beaten egg and then through 50 g of breadcrumbs.

Fry the croquettes

Heat ½ pound of oil in a pan over medium-high heat. Fry the croquettes in small quantities until golden brown on all sides. Remove to a plate with kitchen paper to remove excess oil.
