Description

These salmon croquettes in tomato sauce are a delight that I often prepare at home. Fresh salmon, combined with breadcrumbs and a touch of milk, creates a smooth texture and an unparalleled flavor. The homemade tomato sauce, with its natural sweetness, perfectly complements the flavor of the fish. They are ideal for a family meal or a special dinner. In addition, they can be prepared in advance and fried just before serving. A nutritious and tasty dish that everyone will love! Perfect to enjoy at any time of the year, although they taste even better in spring and summer.

Ingredients (10 ingredients)

  • 600 gramos Fresh salmon
  • 50 gramos Bread crumbs
  • 60 mililitros Whole milk
  • 1 pieza Egg yolk
  • 2 dientes Garlic
  • 200 gramos Tomato sauce
  • 100 gramos Wheat flour
  • 200 mililitros Olive oil
  • 1 pinch Salt
  • 1 rama Parsley

Preparation (9 steps)

Prepare the breadcrumb and milk mixture

In the Thermomix bowl, add 50 g of breadcrumbs and 60 ml of whole milk. Mix for 5 seconds at speed 4. Reserve the mixture.

Chop the garlic and parsley

Thermomix® Setting
3 sec/Speed 7

In the Thermomix bowl, add 2 cloves of garlic and 1 sprig of parsley. Chop for 3 seconds at speed 7. Remove and reserve.

Chop the salmon

Thermomix® Setting
5 sec/Speed 5

Cut 600 g of fresh salmon into pieces and add them to the Thermomix bowl. Chop for 5 seconds at speed 5. Remove and reserve.

Mix all the ingredients

In a large bowl, mix the chopped salmon, breadcrumb and milk mixture, 1 egg yolk, chopped garlic and parsley and 1 pinch of salt. Mix well until all ingredients are integrated.

Form the meatballs

Take portions of the mixture and form balls of approximately 4 cm in diameter with your hands.

Flour the meatballs

Cover the meatballs with 100 g of wheat flour, making sure they are completely breaded.

Fry the meatballs

In a frying pan, heat 200 ml of olive oil over medium-high heat. Fry the meatballs until they are golden brown on all sides. Remove and place on absorbent paper to remove excess fat.

Heat the tomato sauce

Pour 200 g of tomato sauce into the Thermomix bowl. Heat for 3 minutes at 80°C at speed 1.

Serve

Serve the hot meatballs covered with the hot tomato sauce.
