Description

These potato croquettes from the Thermomix® are a hearty and vegetarian side dish, ideal for festive occasions or the winter season. The main ingredients are potatoes, eggs, potato starch and butter, refined with nutmeg. Preparation takes about 60 minutes and yields 4 servings. The recipe is suitable as a main course or side dish and is a delicious family meal.

  • 500 g Potatoes
  • 2 Eggs
  • 20 g Potato starch
  • 20 g Butter
  • Salt
  • Pepper
  • Nutmeg
  • 1 EL Flour
  • 300 g Breadcrumbs
  • Fat for frying

Cook potatoes

Thermomix® Setting
25 min/Varoma/Speed 1 Varoma

Place 500 g potatoes with peel in the simmering basket. Fill 1 liter of water into the mixing bowl, insert the simmering basket and cook for 25 min./Varoma/speed 1. Then peel the potatoes.

Press potatoes

Press the peeled potatoes through a potato ricer and let the potato mass cool completely.

Prepare egg yolk mixture

Thermomix® Setting
20 sec/Speed 3

Place the cooled potato mass in the mixing bowl. Add 2 egg yolks, 20 g potato starch, 20 g butter, salt, pepper and nutmeg and mix for 20 sec./speed 3. If necessary, add 1 tbsp flour and mix for another 10 sec./speed 3. Use a spatula to push everything away from the edge.

Shape croquettes

Form small croquettes from the dough. First form a small dumpling, then roll and press the ends lightly.

Prepare breading

Lightly whisk 2 egg whites in a bowl. Place 300 g breadcrumbs in a separate bowl.

Bread croquettes

First roll the shaped croquettes in egg white and then in breadcrumbs. If necessary, repeat the process for a thicker breading.

Fry croquettes

Heat fat to 170 degrees in a pot or deep fryer and bake the breaded croquettes in hot fat until golden yellow.
