Description

These poultry croquettes with a melting heart are a real delight! I often prepare them for a quick lunch or a cocktail party appetizer. The secret lies in the melted cheese heart which brings a creamy texture and an irresistible taste. The ground poultry, enhanced with a hint of Espelette pepper and fresh parsley, is incredibly tasty. It's a simple and economical recipe, perfect for using leftover poultry. Feel free to vary the cheeses for even more deliciousness! They are ideal for a friendly meal and will surely please young and old alike.

Ingredients (13 ingredients)

  • 4 piece Chicken breasts
  • 2 piece Beaten eggs
  • 1 piece Onion
  • to taste Melted cheese
  • to taste Olive oil
  • to taste Espelette pepper
  • 1 c. à c. Sunflower oil
  • to taste Flour
  • to taste Breadcrumbs
  • 1 clove Garlic
  • to taste Parsley
  • to taste Salt or fine salt
  • to taste Pepper

Preparation of the poultry

Thermomix® Setting

Put the raw chicken breasts cut into pieces, the onion cut into quarters, the clove of garlic, a pinch of Espelette pepper, the fresh parsley and 1 tsp of sunflower oil in the Thermomix bowl. Mix 15 Sek./Stufe 6.

Shaping the croquettes

Form a ball with the poultry mixture. Insert a piece of melted cheese in the center of each ball. Flatten slightly to form a patty.

Breading the croquettes

Prepare three plates: one with flour, one with beaten eggs and one with breadcrumbs. Pass each croquette successively in the flour, then in the beaten eggs and finally in the breadcrumbs, making sure to coat them well.

Cooking the croquettes

Heat olive oil in a frying pan over medium heat. Gently place the breaded croquettes in the hot pan and cook for 2 to 3 minutes on each side, until golden brown and crispy.

Draining and serving

Place the cooked croquettes on paper towels to remove excess grease. Serve immediately.
