Ingredients (11 ingredients)

  • 1 package pastry for a double crust 9-inch pie, divided
  • 6 cups peeled and sliced apples
  • 0.5 cups crushed almonds
  • 1.25 cups white sugar
  • 0.5 cups brown sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons honey
  • 1 piece large egg yolk
  • 0.5 teaspoon water
  • 0.25 teaspoon almond extract
  • 1 teaspoon ground cinnamon

Preparation (7 steps)

Prepare the pie crust

Preheat oven to 350 degrees F (175 degrees C). Press 1 pie crust into a 9-inch pie pan. This step is done outside of the Thermomix.

Combine dry ingredients

Add ½ cup crushed almonds, 1 ¼ cups white sugar, ½ cup brown sugar, and 2 tablespoons all-purpose flour to the mixing bowl. Mix for 10 Sec./Stufe 3 to combine.

Add apples and coat

15 sec/Linkslauf Speed 2 Reverse

Add 6 cups peeled and sliced apples to the mixing bowl with the dry ingredients. Mix for 15 Sec./Linkslauf Stufe 2 to coat the apples.

Prepare honey mixture

Thermomix® Setting
10 sec/Speed 3

Add 2 tablespoons honey, 1 large egg yolk, ½ teaspoon water, and ¼ teaspoon almond extract to the mixing bowl. Mix for 10 Sec./Stufe 3 to combine.

Melt honey mixture

Thermomix® Setting
45 sec/122°F/Speed 1 50

Heat the honey mixture for 45 Sec./50°C/Stufe 1, stirring with the spatula. Check if the mixture is melted and smooth. If not, heat for another 15 Sec./50°C/Stufe 1.

Combine apple and honey mixtures

Pour the honey mixture over the apple mixture in the mixing bowl. Mix for 15 Sec./Linkslauf Stufe 2 to coat.

Assemble and bake the pie

Transfer the apple mixture to the prepared pie crust; sprinkle filling with 1 teaspoon ground cinnamon. Top pie with the remaining pie crust and pinch edges together to seal. Bake in the preheated oven until crust is lightly browned, 45 to 50 minutes. This step is done outside of the Thermomix.
