Description

These blueberry cream cheese cubes are a real eye-catcher on any buffet! I especially like to make them in the summer when the blueberries come fresh from the bush. The crispy cookie base harmonizes wonderfully with the creamy cream cheese filling and the fruity blueberries. Pre-baking the base makes it particularly crispy. The preparation is a little more complex, but the result is worth it. A great recipe for birthdays or other festive occasions!

Ingredients (11 ingredients)

  • 300 g Frozen blueberries
  • 500 g Oatmeal cookies
  • 200 g soft Butter
  • 375 g Sugar
  • 1200 g Double cream cheese
  • 6 piece Eggs (size M)
  • 120 g Flour
  • 200 g Crème fraîche
  • 1 Lemon
  • 75 g white Coating
  • Frozen blueberries for decoration

Preparation (10 steps)

Prepare blueberries

Let the frozen blueberries thaw and set aside.

Chop oatmeal cookies

10 sec/Speed 8

Put 500 g oatmeal cookies in the mixing bowl and chop for 10 sec./speed 8. If necessary, push down with the spatula and repeat the process.

Prepare cookie base

Thermomix® Setting
20 sec/Speed 4

Add 200 g soft butter and 75 g sugar to the chopped cookies in the mixing bowl and mix for 20 sec./speed 4.

Pre-bake cookie base

Spread the cookie mixture on a baking sheet lined with baking paper and press down. Pre-bake in a preheated oven at 180°C (top/bottom heat) or 160°C (convection) for 10-15 minutes.

Prepare blueberry puree

20 sec/Speed 8

Put 300 g thawed blueberries in the mixing bowl and puree for 20 sec./speed 8. Then strain through a sieve to remove the seeds.

Prepare cream cheese mixture

Thermomix® Setting
30 sec/Speed 4

Put 1.2 kg double cream cheese and 300 g sugar in the mixing bowl and stir for 30 sec./speed 4.

Add eggs and remaining ingredients

Add 6 eggs, 120 g flour, 200 g crème fraîche, juice of 1 lemon and the blueberry puree to the mixing bowl and stir in for 30 sec./speed 3.

Bake cheesecake

Pour the cream cheese mixture onto the pre-baked cookie base. Fill an ovenproof dish with hot water and place on the bottom rack of the oven. Slide the cheesecake onto the middle rack and bake at 160°C (top/bottom heat) or 140°C (convection) for 30-40 minutes. Then let cool in the switched-off oven with the door slightly open for about 20 minutes.

Melt coating

4 min/122°F/Speed 2 50

Put 75 g white coating in pieces in the mixing bowl and melt for 4 min./50°C/speed 2.

Decorate cake

Fill the melted coating into a small freezer bag, cut off a corner and drizzle in strips on the cooled cake. Cut the cake into approx. 4 cm cubes and decorate with frozen or thawed blueberries as desired.
