Ingredients (26 ingredients)

  • 2 cups white sugar
  • 1 cup softened butter
  • 3 piece large eggs
  • 2 teaspoons vanilla extract
  • 2 cups mashed ripe bananas
  • 0.5 cup drained crushed pineapple
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.75 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1.5 cups white sugar
  • 1.5 cups packed dark brown sugar
  • 1 cup milk
  • 3 tablespoons corn syrup
  • 2 tablespoons butter
  • 0.25 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup pecan halves
  • 2 container Greek cream cheese, softened
  • 4 ounce Greek cream cheese, softened
  • 1 cup softened butter
  • 8 cups confectioners' sugar
  • 3 tablespoons maple syrup

Preparation (12 steps)

Preheat oven and prepare muffin tin

Preheat the oven to 350 degrees F (175 degrees C). Line 30 muffin tin cups with paper liners. No Thermomix settings are needed for this step.

Cream sugar and butter

Add 2 cups white sugar and 1 cup softened butter to the Thermomix bowl. Mix for 2 Min./Stufe 3 until creamy.

Add 3 large eggs and 2 teaspoons vanilla extract to the Thermomix bowl. Mix for 30 Sec./Stufe 3.

Combine dry ingredients

Add 3 cups all-purpose flour, 1 teaspoon baking soda, ¾ teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, and ¼ teaspoon salt to the Thermomix bowl. Mix for 10 Sec./Stufe 4 to combine.

Combine wet ingredients

Mix the wet and dry ingredients in the Thermomix bowl for 30 Sec./Stufe 3. Use the spatula to scrape down the sides of the bowl.

Add coconut and pecans

Add 1 cup sweetened shredded coconut and 1 cup chopped pecans to the Thermomix bowl. Mix for 10 Sec./Linkslauf Stufe 2.

Fill muffin tins

Fill lined muffin tin cups 2/3 full with batter. No Thermomix settings are needed for this step.

Bake cupcakes

Bake in the preheated oven until a cupcake top bounces back when pressed, 25 to 30 minutes. Cool completely on a wire rack. No Thermomix settings are needed for this step.

Prepare praline topping

Thermomix® Setting

Add 1 ½ cups white sugar, 1 ½ cups packed dark brown sugar, 1 cup milk, 3 tablespoons corn syrup, 2 tablespoons butter, and ¼ teaspoon salt to the Thermomix bowl. Cook for 20 Min./112°C/Stufe 2. Remove from heat and add 2 teaspoons vanilla extract. Scoop caramel mixture onto a sheet of waxed paper while still warm. Add 1 cup pecan halves while still warm and allow praline topping to cool before handling further.

Prepare cream cheese frosting

Thermomix® Setting
1 min/Speed 3

Add 2 (4 ounce) containers Greek cream cheese, softened, 1 cup softened butter, and 3 tablespoons maple syrup to the Thermomix bowl. Mix for 1 Min./Stufe 3, scraping the sides down with a spatula. Add 8 cups confectioners' sugar slowly until frosting is well mixed, about 30 Sec./Stufe 3.

Frost and top cupcakes

Add frosting to the tops of the cooled cupcakes and top with praline topping. No Thermomix settings are needed for this step.
