Ingredients (11 ingredients)

  • 1.75 cups cupcake flour
  • 1.25 cups all-purpose flour
  • 2 cups white sugar
  • 1 tablespoon baking powder
  • 0.75 teaspoon salt
  • 1 cup butter, cut into cubes
  • 4 piece large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 teaspoon pineapple extract

Preparation (7 steps)

Preheat oven and prepare muffin tin

Preheat oven to 325 degrees F (165 degrees C). Line 36 muffin cups with paper liners. No Thermomix settings are needed for this step.

Combine dry ingredients

Add 1 3/4 cups cupcake flour, 1 1/4 cups all-purpose flour, 2 cups white sugar, 1 tablespoon baking powder, and 3/4 teaspoon salt to the Thermomix bowl. Mix for 3 minutes/Stufe 3.

Add butter

Add 1 cup butter, cut into cubes, to the Thermomix bowl. Mix for 1 minute/Stufe 3 until the butter chunks are coated with flour.

Incorporate eggs

30 sec/Speed 3

Add 1 large egg to the Thermomix bowl and mix for 30 seconds/Stufe 3. Repeat this process for the remaining 3 eggs, ensuring each is fully integrated before adding the next.

Add liquid ingredients

1 min/Speed 3

Slowly add 1 cup whole milk, 1 teaspoon vanilla extract, 1 teaspoon coconut extract, and 1 teaspoon pineapple extract to the Thermomix bowl. Mix for 1 minute/Stufe 3, scraping down the sides of the bowl as needed, until fully integrated.

Fill cupcake liners

Spoon the batter into the prepared paper liners, filling them about 2/3 full. No Thermomix settings are needed for this step.

Bake cupcakes

Bake in the preheated oven until a toothpick inserted into the center comes out clean, 17 to 20 minutes. No Thermomix settings are needed for this step.
