Description

This chicken curry is a dish I often make because it's simple to make and everyone likes it! The chicken breast, cut into chunks and marinated in a creamy coconut and curry sauce, becomes very tender and flavorful. The basmati rice, cooked with star anise, adds an aromatic touch that goes perfectly with the curry. Ideal for a family dinner or with friends, this dish is a real comfort food. It takes about an hour to prepare, including marinating, and is also perfect for those who don't have much time to devote to cooking. A tip? Add a pinch of fresh chilli for an extra touch!

Ingredients (15 ingredients)

  • 800 g chicken breast
  • 1 tbsp curry
  • 25 g butter
  • 250 ml unsweetened coconut milk
  • 2 tbsp cornstarch
  • 1 piece onion
  • 1 clove garlic
  • 1 piece fresh chilli
  • 2 tbsp extra virgin olive oil
  • fine salt
  • 250 g basmati rice
  • 1 bacca star anise
  • fine salt
  • chilli
  • parsley

Preparation of onion and garlic

Insert 1 onion into the bowl and chop for 3 Sec./Level 5. Add 2 cloves of garlic and chop for 3 Sec./Level 7.

Sauté onion and garlic

Thermomix® Setting

Add 2 tablespoons of extra virgin olive oil and 1 fresh chilli pepper cut into pieces into the bowl. Sauté for 3 Min./120°C/Level 1.

Preparation of the curry sauce

In a pan, melt 25 g of butter over low heat. Add 1 tablespoon of curry and mix. Pour 250 ml of coconut milk (unsweetened) and cook until the butter is completely melted. Transfer the sauce to a large bowl.

Marinating the chicken

Cut 800 g of chicken breast into 3-4 centimetre chunks. Pour the chicken into the bowl with the curry sauce. Add fine salt to taste and 2 tablespoons of cornstarch. Mix well to make sure the chicken is completely covered in the sauce. Cover with transparent film and let it rest in the refrigerator for at least 30 minutes.

Cooking the chicken curry

Pour the marinated chicken into the bowl with the sautéed onion and garlic. Cook for 20 Min./100°C/Level 1/Reverse. If the sauce dries out too much, add half a glass of coconut milk or water.

Cooking the basmati rice

In the meantime, boil 250 g of basmati rice in salted water flavored with 1 star anise pod in a pot. Cook for 12-15 minutes, then drain and set aside.

Plating

When the chicken is well cooked, plate: take a large serving dish and put the rice. Make a hollow in the center and pour in the chicken and curry sauce. Decorate with parsley to taste chopped and a little chilli to taste fresh in pieces.

My passion for this recipe comes from the desire to recreate at home those flavors that have always fascinated me. It is not a 100% traditional Indian recipe, but my own interpretation, adapted to the tastes of my family and the practicality of the Thermomix®. The chicken breast, the main ingredient, is cut into chunks to ensure even cooking and perfect marinating. Marinating is essential: coconut milk, with its delicate sweetness, softens the meat and makes it incredibly tender. Curry, a mix of spices, gives a warm and enveloping flavor. Cornstarch, added to the marinade, helps bind the sauce during cooking, creating a creamy and velvety consistency. The onion and garlic, sautéed with a pinch of fresh chilli, form the aromatic base of the dish. Basmati rice, with its long and fragrant grains, is the perfect accompaniment. Star anise, added during cooking, gives a slightly liquorice aroma that goes perfectly with the curry. For preparation with the Thermomix®, it is important to follow the order of the ingredients and the cooking times indicated. The sautéed onion and garlic should be golden brown, but not burnt. During the cooking of the chicken, it is essential to check the consistency of the sauce and add a little coconut milk or water if necessary. A trick for a more intense flavour is to lightly toast the curry in a pan before adding it to the coconut milk. For a vegetarian or vegan version, you can replace the chicken with chickpeas, tofu or mixed vegetables such as cauliflower, broccoli and sweet potatoes. You can vary the spice mix by adding grated fresh ginger, turmeric, coriander or cumin. For a touch of freshness, you can add lime juice or Greek yogurt at the end of cooking. Chicken curry with aromatic basmati rice is perfect served hot, garnished with chopped fresh parsley and a pinch of fresh chilli for those who love spicy flavors. It can be accompanied with warm naan bread, mango chutney or cucumber and yogurt salad. Leftover chicken curry can be stored in the refrigerator for a maximum of 2-3 days. It can be reheated in a pan or in the microwave. The basmati rice is stored separately and reheated in steam or in the microwave. To prepare the dish in advance, you can marinate the chicken the night before and store it in the refrigerator. In this way, the flavors will intensify and the chicken will be even more tender.
