Description

This wintery berry jam with spices is a fruity-spicy spread that is quick to prepare with the Thermomix®. The main ingredients are mixed berries, preserving sugar, lemon and orange, refined with Christmas spices. In just 20 minutes, approx. 6 servings of delicious jam are created. Ideal for breakfast, as a gift idea or for anyone who loves fruity spreads.

Ingredients (9 ingredients)

  • 1 kg Mixed berries (deep frozen)
  • 600 g Preserving sugar (2:1)
  • 1 Stück Lemon (organic, juice and peel)
  • 1 Stück Orange (organic, juice and peel)
  • 0.5 TL Cinnamon (ground)
  • 1 Messerspitze Cloves (ground)
  • 1 Messerspitze Cardamom (ground)
  • 1 Stück Pulp of a vanilla bean
  • 200 g Mulled wine

Preparation (8 steps)

Sterilize jars

Sterilize the jars (total capacity approx. 1,200 ml) by baking them in the oven at 150 degrees for 10 minutes or boiling them in a large pot. Only boil plastic parts, do not bake.

Thaw fruits

Let the fruits thaw for several hours at room temperature or in a saucepan over medium heat for about 10 minutes.

Prepare citrus fruits

Wash lemon and orange with hot water. Grate the peel and squeeze out the juice.

Puree fruits

Put 1 kg mixed berries, juice of 1 lemon, peel of 1 lemon, juice of 1 orange and peel of 1 orange in the mixing bowl and puree for 10 sec./speed 6. If you don't like pieces, you can optionally strain the mixture through a sieve.

Add and stir in ingredients

Add 600 g preserving sugar, ½ tsp cinnamon, 1 pinch of cloves, 1 pinch of cardamom and pulp of a vanilla bean and stir for 10 sec./speed 3.

Cook jam

Attach the measuring cup and cook for 4 min./100°C/speed 2.

Perform setting test

Setting test: Place 1 tbsp of the hot jam on a cold plate and let it cool. If the mixture becomes firm, the jam can be bottled. Otherwise, cook for another minute and carry out the setting test.

Bottle jam

Optionally skim off the foam, then fill the sterilized jars to the brim with the jam and close immediately. Let cool for at least 8 hours, preferably overnight.
