Ingredients (13 ingredients)

  • 1000 g mixed goulash (half beef/half pork)
  • 2 EL clarified butter
  • 3 medium-sized onions
  • 200 g mushrooms
  • salt
  • black pepper
  • 2 EL tomato paste
  • 2 EL flour
  • 1 TL sweet paprika
  • 400 ml beef stock
  • 0.25 l dry red wine
  • 4 tomatoes
  • 100 g heavy cream

Preparation (9 steps)

Prepare the meat

Pat 1 kg of mixed goulash (half beef/half pork) dry. Heat 2-3 tablespoons of clarified butter in a pan. Brown the meat in portions, turning only when the underside has a crust. Set the browned meat aside.

Chop the onions

Peel, quarter and place 3 medium-sized onions in the mixing bowl. Chop for 3 sec/level 5.

Sauté the onions

Leave the chopped onions in the mixing bowl. Sauté for 2 min/120°C/level 1 without the measuring cup.

Prepare mushrooms and tomatoes

Clean and halve 200 g of mushrooms. Wash and quarter 4 tomatoes.

Add vegetables to the goulash

Return the browned meat to the mixing bowl. Season with salt and black pepper. Add the mushrooms and tomatoes and sauté for 2 min/120°C/level 1.

Add tomato paste and flour

Stir in 2 tablespoons of tomato paste and sauté for 1 min/120°C/level 1. Sprinkle 2-3 tablespoons of flour over the top and sauté while stirring for 1 min/120°C/level 1.

Stir in paprika powder

Briefly stir in 1-2 teaspoons of sweet paprika and sauté for 30 sec/120°C/level 1.

Deglaze and simmer

Deglaze with 1/4 l of dry red wine. Pour in 400 ml of beef stock (jar), bring to a boil and dissolve the browned bits. Cover and simmer for 120 min/95°C/level 1. In between, add some water or broth if necessary.

Refine and season

Finally, add 100 g of heavy cream and stir in for 1 min/90°C/level 1. Season with salt and pepper to taste.
