Description

This hearty beef goulash, prepared in the Thermomix®, is a savory main course with beef, onions, garlic, and tomato paste. Refined with red wine and paprika, it is especially suitable for the cold season. The preparation time is about 60 minutes for 6 servings. Ideal as a family meal or for festive occasions.

Ingredients (12 ingredients)

  • 500 g Onions
  • 3 Zehe(n) Garlic
  • 2 EL Clarified butter
  • 1.5 kg Beef goulash
  • 4 EL Tomato paste
  • 400 ml Red wine
  • Salt
  • 4 TL Sweet paprika
  • 1 Msp. Cayenne pepper
  • 1 TL Marjoram
  • 800 ml Beef broth
  • 2 EL Cornstarch

Preparation (12 steps)

Prepare onions and garlic

Peel and quarter 500 g onions. Peel 3 cloves of garlic.

Chop onions

Place the quartered onions in the mixing bowl and chop for 3 sec./speed 5. If necessary, use the spatula to push down from the edge.

Chop garlic

Thermomix® Setting

Add the garlic to the onions in the mixing bowl and chop for 3 sec./speed 7. If necessary, use the spatula to push down from the edge.

Sauté onions and garlic

Add 2 tbsp clarified butter to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Sear meat

Heat 2 tbsp clarified butter in a pan and sear 1.5 kg beef goulash in batches. Then add the seared pieces of meat to the mixing bowl.

Roast tomato paste

Add 4 tbsp tomato paste to the meat, onions and garlic in the mixing bowl and roast for 2 min./120°C/speed 1.

Deglaze with red wine

Add 400 ml red wine to the pan in which the meat was seared and dissolve the roasting residues. Then add the red wine to the mixing bowl.

Season

Add salt, 4 tsp sweet paprika, 1 pinch cayenne pepper and 1 tsp marjoram to the ingredients in the mixing bowl.

Add broth

Pour 800 ml beef broth into the mixing bowl and stir everything for 5 sec./speed 3.

Cook goulash

30 min/212°F/Linkslauf Speed 1 100 Reverse

Close the mixing bowl and cook the goulash for 30 min./100°C/reverse rotation speed 1.

Thicken goulash

Thermomix® Setting
3 min/212°F/Speed 2 100

Stir 2 tbsp cornstarch with a little cold water until smooth. Add the stirred cornstarch to the mixing bowl and stir in for 3 min./100°C/speed 2 until the goulash has thickened.

Season to taste

Season the goulash again with salt, paprika, cayenne pepper and marjoram and serve.
